Cucumbers with Dressing

I did not like how thin the dressing was either, for some reason I expected it to be litte thicker, so I usually play with the amounts. Every time I make it, I tinker with the amounts until I get it to my taste. It really is good though! Definitely add onions if you like onions, they all tste great together. You can let it marinate in the fridge for awhile too.

Mini Chicken Pot Pies

I have mixed feelings about these. I gave them three stars because my boyfriend and the kids loved them and keep asking me to make them again. I made these twice. The first time I made them as is except I seasoned the cooked chicken. I also used more chicken and vegetables than called for. That didn't seem to create much of a problem except there wasn't as much 'gravy'. I used grands large biscuits the first time I made them, and put them in the muffic tin exactly as the recipe states, and covered with cheese. but when they baked, the filling was hot, the cheese was melted but the dough was not cooked all the way through. And it certainly is not like a pot pie dough. It's a biscuit...very breadlike. The second time I made them, I cooked them longer. This time I had smaller biscuits so I used two for each muffin, and then on a couple I used one small biscuit, experimenting with the idea that maybe there was too much dough. With the one biscuit pies, the amount of dough did not work. They fell apart. With the two biscuit pies, I made sure to leave them in the oven long enough that they cooked, but then they were dry and that dried up some of the gravy as well. Incidentally I used American cheese on the second batch, and everyone said the cheddar is better. So basically the taste is not bad (my boyfriend said it reminded him of his childhood), but I keep workin on the crust.

Monkey Bread I

Made this several times. I cannot make it too often because it is too good! The biscuits make little pieces of cinnamon rolls basically, and the sugars go to the bottom of the pan so when you flip it over it makes a sauce on top. Eat it hot, too, that's the best way. I am a lover of pecans, walnuts, etc and while they are really good in here, be careful not to overdo it and layer them with the biscuits. Delicious!

Chicken-Stuffed Shells with Sherry Sauce

This is one of the recipes I go to for impressing people! It truly is delicious. The sauce that goes on the shells is to die for, and I might even steal it to use in other dishes. It's that good! I used all button mushrooms and red cooking wine because it was all I had and instead of gruyere, I used half cream cheese and half swiss laughing cow wedges. It turned out perfect! I also seasoned the chicken breast with a basic poultry seasoning rub (like kick'n chicken). Other than that it does not need any other seasoning. My only recommendation to anyone making this recipe is DO NOT pulse in a food processor. You want to pull the chicken yourself. It is tedious but if you pulse in a food processor it grinds the chicken which leads to a gritty texture. When I made this the second time, no one liked them simple because of the texture. It doesn't feel like you're eating real chicken. Otherwise though, this is great! Make it!

Exquisite Yeastless Focaccia

My only problem was that I undercooked it slightly (my fault, I was in a hurry and mistimed the meal) however, it is definitely soft and chewy, and like others have said, is pretty versatile as far as toppings are concerned. Keep in mind, my bread was undercooked and still delicious, so give it a try! My boyfriend and I enjoyed it dipped in oil with herbs.

Mushroom and Swiss Chicken

My boyfriend and I really liked this. It sounds really simple, but the flavors are really good. i marinated the chicken for a couple of hours, then cooked it with the mushrooms in the oven. Really very good, simple and easy and yummy, especially if you like like mushroom swiss burgers and stuff.

Savory Crescent Chicken

It was quick and easy, the crescent dough was a little difficult at first, but after reducing the amount I put in each pocket, it was better. I did have some leftover mixture though, so I could probably have used a can and a half of dough. I may have had more chicken than called for though. (I used one big breast that I fried in a skillet) The flavor was ok, I added some seasoning to the chicken breast, cooking it with little pieces of broccoli, and sprinkling it with cheddar cheese before baking, but that didn't make a huge difference. I might try this with different fillings. Also, I slightly undercooked the dough, it was a little gooey inside, so watch that. it was good, just not fantastic with this particular filling. (Maybe it was the cream cheese?) Again, I may try it with something else, do like a chicken cordon bleu type thing. Oh and they didn't drip a bit, I put them on a cookie sheet without greasing it or anything and one of them had a big hole in the top and didn't leak, but still warm and moist inside, so it is worth a try, it might be to your preference!

Creamy Banana Bread

This was very yummy. When I was making it, I kept thinking to myself: "what do they mean by creamy?" It's a really different texture, and it really is 'creamy' as weird as it sounds. I thought about it and then it hit me: it's the same texture as a rich pound cake! It's virtually banana pound cake. (but more banana-ey). The only thing I didnt like about it was that the brown sugar on the outside burned. It wasn't like a coffee cake where it's still sugary, I had to cut the crust completely off. However this isn't the first recipe I've had trouble with when it called for a sugared coating on bread, so it might be my oven.

Easy Banana Bread

I've been searching for the perfect banana bread...very flavorful, moist, banana-ey....and this is the best out of all the recipes I've tried. It's perfect. The only substitution I make is using yogurt instead of shortening. It's healthier...changes the texture to make it a little less crumbly and more chewy like bread, but in a good way. For variations try using cream cheese or sour cream or applesauce in place of oil or in this case shortening and if you wanna play around with the flavors try adding fresh/frozen fruit (strawberry banana bread is a good combination) or using peanut butter. This is my permanent base recipe for banana bread now and good by itself or with any of my tinkering when Im in the mood for something different! Happy baking! Yummy!! Ps: walnuts are sooo good in this. Makes about 24 muffins if any one is curious, although I guess it depends on your muffin size.

Amazing Crusted Chicken

Very yummy!!! Had a little trouble with the Breading, but I think that's because I didn't crush the cheezits enough. We like it though. Chicken was juicy and flavorful. :)

Orange Soy Pork Loin

Garlic Broccoli

Thus was very, very garlicky, and vinegary. I don't have a problem with strong flavors and I could handle it, but it's really way too much garlic for one head of broccoli. I feel like I wasted some garlic. Also, even though I normally like these types of flavors I felt like something was missing. I did completely forget the Parmesan cheese, but I don't think that was it. It felt like all I could taste was garlic, and there weren't enough flavors playing around for me. However, this might be good if added to another dish....

Marinated Pork Chops

I thought this was delicious it tasted almost exactly like the Carolina country marinade packet from McCormick except without the caraway seed. My boyfriend didn't like it as much as I did, but I love vinegary/mustardy tastes so I thought it was great. He said he wished I had marinated the broccoli in it, and used the Asian marinade I used for the broccoli on the pork chops. But like I said if you like the Carolina country marinade or Georgia mustard type barbecue sauce then this is right up your alley.

Peach Curry Glazed Pork Chops

My boyfriend and I really liked this...I initially thought the curry flavor was too strong but I added all the juice from a can of peaches plus half of the slices and some brown sugar and boiled it on the stove to thicken it up into a sauce and seasoned the prom chops with some salt and pepper and a pinch of Cajun seasoning while cooking, then poured the sauce on top. The sauce was really, really good that way. :)

Applesauce Barbeque Sauce

To me, this tasted exactly like cinnamon applesauce with a little bit or ketchup mixed in. I'm not sure if its the amount of applesauce or what, but I didn't particularly like the flavor or the texture. However, after quite a bit of tinkering to make it taste more like barbeque sauce, it tasted ok on pork chops.

Pecan Cream Cheese Pie

I personally thought this was absolutely delicious and needed no changes whatsoever. I used graham cracker crust because I personally like that better, but I'm sure the regular pie crust would be fine too. My boyfriend didn't like it though, and he LOVES cheesecake. He said the texture was weird for him. It was fluffier than cheesecake due to the whippsed cream and wasn't baked so it was just really light. The cream cheese flavor wasn't quite as concentrated either so if you are looking for a cheesecake, it is not quite there, however it is still rich and yummy especially if you like nuts and caramel. (think butter pecan ice cream in a cheesecake)

Graham Cracker Crust I

The perfect graham cracker crust. I didn't change anything and didn't bake it, just used it for a cheesecake. But it was sweet, crumbly, yet stuck together like it was supposed to...it made enough for one pie for me, so if you are making two pies, double it! Oh and I forgot, I didn't use the cinnamon, but the crust is really good when you throw some nuts into your food processor and use that in replacement for half of the graham cracker crumbs. =)

Pork Roast With The World's Best Pork Loin Rub

Yummy! Sweet and Spicy and really good. I enjoyed it. Keep in mind that it makes a lot though. I had about the right amount of pork and I still had plenty left over! I tasted it before I put it on the meat and was pleasently surprised by the combination of flavors. Just right!

Cocktail Meatballs I

I used this recipe as a base recipe, so I am reviewing it, even though I made some changes. I'm not going to go into all of the additions I made, (mostly cause I don't remember everything I added) but I do want to say this is a pretty good base recipe. I used Heinz chili sauce, which tasted like a slightly spicier version of ketchup and so with the grape jelly it tasted really ketchupy, so I would recommend adding some kind of spice to it, maybe smoke flavoring, and if you like your sauce sweeter, add more grape jelly, possibly some brown sugar. As for the meatballs, they were good, but had a strange texture to me, really mushy tasting, even though they were definitely cooked all the way through,. Not sure what the cause of the texture was or if they are supposed to be that way, but the flavor was pretty good.
