Crunchy Oven Fried Tilapia

I followed everyones suggestions to add more spices to the breadcrumbs and I added lots of garlic and onion powder. It was great and I have some crunchy fish fillets for a fish sandwich lunch tomorrow!

Nutty Pumpkin Waffles

The waffles themselves were tasty, I used WW flour instead of regular and brown sugar instead of granulated, however the syrup wasn't a favorite. It resembled baby food more than anything. Will make the waffles again but skip the syrup next time.

Curried Zucchini Soup

This was a delicious soup with simple flavors and ingredients . . . a great way to use up late summer veggies. I added yellow squash to the zucchini since I had to use it up and it was great. I think I might experiment with melting in goat cheese to add to the creaminess since goat cheese pairs well with curry recipes. Oh, and my boyfriend, who hates zucchini, had thirds!

Yellow Squash Casserole

Personally, I didn't like this recipe a lot. It was OK but it ended up tasting more like squash au gratin (which I don't care for) than a squash casserole I was expecting. Overall, it was an OK recipe but not one I'd make again.

Peach Cobbler II

Not sure if it was the shortening I used (is it not all the same) but the cobbler came out white colored and plastic tasting. We just fished out the peaches and put them over ice cream and THAT tasted delicious.

Hot Breakfast Couscous

Gave a four because recipe could use just a little tweaking. Definitely needed more milk, probably 3/4 cup more for me. Also added more honey. I guess if your used to sweeter tasting breakfasts like me, adding some sugar-free maple syrup did the trick. Took a moment to get used to the texture but now I love it. After your own personal tweakings, this can be a great new breakfast dish.

Best Ever Caramel Apple Crisp

Made this dessert following other comments and came out great. Used a pre-baked pie crust as a base and just piled filling into that instead of dealing with a large mess. Used a double-boiler to melt caramel so all in all clean up was a snap. Very sweet recipe that went great with vanilla ice cream!
