Thin Egg Pancakes

My family calls these pancakes palacinky, the Slovak word. They are one of my favorite foods. I use a touch less butter in the recipe, and substitute a dash of cinnamon for the salt & pepper. They are delicious topped with stewed fruit - strawberries and peaches are wonderful. Also, if you use slightly less sugar, they can be a dinner entree. Fill with sour cream sauce & mushrooms or leeks, or chicken paprikash.

Coconut Macaroons III

Golden Cheddar Muffins

Great recipe! These were delicious right out of the oven, and they kept for a few days quite well. 10 seconds in the microwave does wonders. I really liked the subtle mustard flavor and the tiny bit of spiciness.

Creamy Carrot Soup

I tried this soup and immediately made another batch to freeze for later. I used a can of light coconut milk and it was just delicious. This soup tastes like a breath of fresh air.

Newport Clam Chowder

Strawberries and Cream Bread Pudding

I didn't have strawberries so I made this using thawed frozen raspberries and raspberry jam. Perfect amounts of sweetness and moistness. It was absolutely delicious with a scoop of vanilla ice cream.

Spaghetti Squash I

I love spaghetti squash and this recipe puts a tasty spin on it. I used red and green bell peppers, kalamata olives, dropped the basil, and had it cold as a salad. I like to undercook the squash so it's a little crunchy, since so many of the winter vegetables are softer. This makes a great lunch alternative.

Hungarian Mushroom Soup

This is absolutely one of the most delicious soups I've ever had. I added a little extra paprika and might use a bit less butter next time, but the combination of flavors is just right. It reminds me of the Slovak food I grew up on! Thank you for this wonderful recipe.

Cheesy Green Chili Rice

I didn't have chiles, so used 1 can of chopped jalapenos instead. Tasty, but a little plain. Served it on tortillas with salsa and avocado.

Curried Spinach Soup

Tasty and filling! This recipe is sure to become a new favorite, since I always have the ingredients on hand. I didn't puree anything and used diced white onions instead of green. Needs a dash of salt, but this is a great soup.
