Iced Pumpkin Cookies

Reviewed: Dec. 4, 2009
These cookies are so easy but look and taste professional. One of the best cookie recipes I've found! Based on another cook's advice, I shaped mine with a spoon. If you spray the back of the spoon with cooking spray it won't stick and will really smooth out the surface of the cookie.

Quick and Easy Lemon Pie

Reviewed: Dec. 4, 2009
Tastes very refreshing, but it never set up for me. On the suggestion of other cooks, I put the pie in the freezer for some time, but when it came out the filling just ran all over the place. Maybe the pie filling would be better chilled in parfait glasses.

Apple-Filled Cranberry Muffins

Reviewed: Dec. 1, 2009
Great holiday recipe! The apple layer really "makes" these muffins. Next time I will use more apples. I added chopped pecans to the apple layer and the cranberry batter.

Corn and Cheddar Chowder

Reviewed: Nov. 20, 2009
The sage and cumin put a different spin on this, making it taste a lot different than other chowders with similar ingredients.

Oregon Salmon Patties

Reviewed: Nov. 13, 2009
Love the dry mustard and parsley in these. I used a bit of olive oil instead of the butter & shortening, and 2 green onions in place of the white onion. Will definitely make again.

Vegan Black Bean Soup

Reviewed: Nov. 10, 2009
Pretty spicy! I used half chickpeas/half black beans and added some swiss chard and orange bell pepper. A good solid vegetarian soup.

Coconut Milk Shrimp Soup

Reviewed: Nov. 9, 2009
Great flavor! I stuck to the recipe except for leaving out one of the carrots and adding 1 chopped celery stalk when cooking the mushrooms. I agree with the previous reviewer that there wasn't enough liquid to call this a soup; the pasta just soaks it all up. I added 4 cups of veggie stock to make more of a broth. This soup is attractive and a nice way to switch up my usual rotation of meals. Thanks!

Cauliflower Cheese Pie

Reviewed: Sep. 20, 2009
Wonderful side dish for a nice dinner. This is a bit labor-intensive, but you can make the crust ahead of time and add the cauliflower filling later when you are ready to eat. I will surely make it again.

Peach Raspberry Cobbler

Reviewed: Sep. 20, 2009
The fruit combination was great, but this time I finally realized I am not a cobbler lover. The dough is too salty, soft, and bland for my tastes. Peach raspberry crisp is the way to go.

Very rich, smoky, and hearty. This was excellent, even by Alaskan standards!

Chocolate Chocolate Chip Cake Cookies

Reviewed: Sep. 20, 2009
These cookies are very rich and chocolaty. I left out the walnuts and added 1/4 cup of millet instead. This gives the cookies a little crunch and some extra nutrition.

Raspberry Banana Bread

Reviewed: Sep. 14, 2009
This recipe helped me use some sad-looking bananas without having a strong banana flavor. Fresh whole raspberries in quick bread are surprising and delicious!

Butter Chickpea Curry

Reviewed: Sep. 8, 2009
This recipe is very quick, and it really tastes authentic. I used fire-roasted diced tomatoes in place of the tomato soup.

I used homemade vegetable broth & added chickpeas at the end. Tastes great cold, so it makes a good lunch.
