Spiced Pecans

Swapped nutmeg for ginger & cardamom and used half white sugar, half brown sugar. Also subbed 1 cup of pecans for walnuts. Took to my in-laws for Thanksgiving.

Kheer (Rice Pudding)

Made this with the first four ingredients. Added dried cherries in place of the raisins, and sprinkled on a little lavender-infused sugar for the floral taste. Wonderful!

Chewy Chocolate Chip Oatmeal Cookies

not bad. they didn't rise at all, though I am at high altitude, so that could have been the reason. I did use extra flour and less salt and the flavor was just right. I also used old fashioned oats chopped in a food processor instead of quick oats.

Cod Curry

I bought cod for the first time recently and I'm happy to have this unique fish dish to put into my dinner rotation. My only modification was to keep the seeds in the chiles for more heat, and add a dash of cayenne. Very tasty.

Green Chile Cheese Beer Bread

This recipe was nearly effortless and turned out perfectly. I used the AR formula for "self-rising flour", and made 1 of the 3 cups whole wheat flour. Also didn't puree the cheese & chiles, just shredded and chopped finely. Will definitely make again!

Big Soft Ginger Cookies

These taste great and stay soft, but they ended up being really flat cookies. I was hoping they'd puff up and be cake-like, and even added some baking powder to get them to rise. Great cookies but I'm still looking for my ideal ginger cookie...

Iced Pumpkin Cookies

These cookies are so easy but look and taste professional. One of the best cookie recipes I've found! Based on another cook's advice, I shaped mine with a spoon. If you spray the back of the spoon with cooking spray it won't stick and will really smooth out the surface of the cookie.

Quick and Easy Lemon Pie

Tastes very refreshing, but it never set up for me. On the suggestion of other cooks, I put the pie in the freezer for some time, but when it came out the filling just ran all over the place. Maybe the pie filling would be better chilled in parfait glasses.

Apple-Filled Cranberry Muffins

Great holiday recipe! The apple layer really "makes" these muffins. Next time I will use more apples. I added chopped pecans to the apple layer and the cranberry batter.

Oregon Salmon Patties

Love the dry mustard and parsley in these. I used a bit of olive oil instead of the butter & shortening, and 2 green onions in place of the white onion. Will definitely make again.
