I am really into slow cooker recipes. Being a mommy to a toddler I don't have alot of time to spend on cooking, so I love being able to throw something into the slow cooker, coming back 6 hours later and dinner is done!

Slow Cooker Carnitas
Were these carnitas good? Sure, they were edible. But if you are looking for a recipe that tastes like actual carnitas or something even close to it then look elsewhere! I followed this recipe EXACTLY, and the seasonings just did not do it for me, it taste nothing like carnitas and the little amount of cinnamon in it was very overpowering! It made them taste almost sweet, I regret spending the $5 for the corriander to make this recipe! When the pork was put into a tortilla with sour cream, salsa, and shredded cheese it kinda masked the sweetness and they taste pretty good, but if you eat the pork by itself it's not a very desireable flavor.. I will not be making this recipe again.

Cottage Cheese Chicken Enchiladas
For years now I have been making the "Chicken Enchiladas I" recipe from this website, my husband and I both LOVE it! So, I thought I would try something new with this recipe.. Well I learned the old saying "Don't mess with perfection" is true! I will not be making this dish again, I will stick with our regular recipe. I followed this recipe exactly except for using flour tortillas instead of corn, and found it to be bland compared to our usual recipe. We did not like the enchilada sauce, and prefer taco sauce instead. The enchilada sauce mixed with the cottage cheese just did not look appealing and kinda smelled bad. Will not be making this recipe again, but if you decide to I would make one major recommendation.. Use 16oz of Taco sauce instead of 10oz of enchilada sauce, I think this would help this dish alot.

Tomato Chicken Parmesan
This recipe was just OKAY for me. I followed the recipe exactly the way is it stated and had alot of trouble keeping the breading on the chicken while it was frying. It turned pretty messy so I had to take the chicken out of the frying pan and finish cooking it in the oven, after cooking in the oven I added the sauce and cheese. It turned out pretty soggy, overall this could have been a really good recipe, I think I am going to give it one more try and see how it goes. Overall it has alot of potential.
