Ultimate Twice Baked Potatoes

Huge hit at Thanksgiving this year. Tasted just like my Grandma made back in the day. Also I bought Yukon potatoes that were all different sizes. And my guests were able to pick big one or little ones. This is on the permanent Thanksgiving menu for sure. Thanks

Simple Country Ribs

I used baby back ribs (always a little easier to find in the market around here). And after boiled it for 40 minutes, I left the ribs in the pot overnight. Grilled the ribs just until there was a good char and served the reduced marinade as a gravy. Great reviews from my guests that night!

Orzo with Parmesan and Basil

Whenever I make this orzo recipe it disappears. And it goes with everything, chicken, fish, steak. A perfect side dish to have in your rotation.

Dill Cream Cheese, Roast Beef and Cucumber Sandwiches

Very good. It is important to use the best roast beef, an English cucumber and a good quality bread. I think next time I will try mascarpone cheese instead of cream cheese for added flavor.

Holiday Chicken Salad

Butternut Squash Pizzas with Rosemary

This was delicious! I really like the review that said to add some balsamic vinegar in the roasting process. It really added a wonderful flavor to the pizza. I used a premade pizza crust and added 1/4 cup of ricotta under the butternut squash. So much flavor and a feel good meal.

Teriyaki Pineapple Turkey Burgers

This was a huge hit! I made it twice for a couple of parties by the pool and everyone loved it. It really tasted amazing with some spicy mustard on it. Even the ketchup lovers tried it with the mustard.

Joe's General Tso's Chicken

I thought this recipe was excellent. I don't often make Chinese food mainly because it is not my forte. But I have been making it more and more these days. I also did my research about rice wine and I read you can sub out dry sherry or white wine. I made 4 lbs of chicken on Sunday and started making hours before the guests arrived. I did 1 lb at a time and when each batch was done, I put it all into baking dishes and warmed in the oven before we were ready to eat. I was a little concerned how the batter would stand up after a couple of hours but it turned out perfect!

Pumpkin Turkey Chili

Awesome!! I definitely will make this again. This is a great healthy version of chili. The only change is that a used orange bell peppers instead of green. Not a fan of the green pepper. Also I had some black beans left over so I put that in the chili too. So delicious!!!!

Debdoozie's Blue Ribbon Chili

Calling this a "Blue Ribbon" Chili couldn't be more right! Great, great, great recipe. I actually ladeled some chili over nacho chips, topped with cheddar and put it under the broiler for a quick melt. It was a big hit during the big game!

Crawfish Chowder

We loved this recipe! I couldn't find crawfish so I used 2 lbs of shrimp. And I used 1 can of each: cream of potato, cream of mushroom and cream of shrimp. I love corn escpecially roasted. So I bought fresh frozen and pan roasted it in some olive oil until the corn has a nice browning color. So I probably added more corn than the recipe states. Lastly added 8 ounces of cream cheese since it comes 8 ounces to a package. I figured it wouldn't hurt with all that extra corn. Really fantastic recipe! Thank you

Foolproof Rib Roast

Foolproof is the perfect title to this recipe. I have never made beef roasts and this is the 2nd time I have used this recipe (my boyfriend loves a beef roast) And both times I was stunned how AMAZING the recipe tasted. So juicy and so easy to make. Obviously it takes a look time to cook and you don't have an oven for sides. You just have to plan accordingly. Delicious!!!

1-Dish Taco Bake

So I used a foil pan, casserole size and it was perfect for this recipe. Wow! This was delicious!! Easy to make and cleanup was a cinch. My boyfriend and I absolutely loved this dinner. I could see kids devouring this meal and I definitely will make again and again!

Egg and Hash Brown Pie

Even though my boyfriend really like this recipe, I felt that it was boring. The ratio of potatoes to egg should be reverse and salt and pepper would help out huge. I felt like I was eating a baked potato. I see everyone tweeking it. If I ever make this again, I will do that as well. Not a favorite for me.

Cinnamon Coffee Cake II

Everyone absolutely loved this cake! I am an expert cook but a beginner baker and I loved the ease in the recipe. The butterscotch gave it great color and the flavors were so different. Nice change to the norm. The next time I would add the nut mixture after about 2/3rds of the batter. That layer seems to be on the bottom of the cake. Definitely will make this recipe again!

Ten Minute Szechuan Chicken

So delicious and easy. Next time I would slow down the cooking so when the sauce thickens it doesn't dry out the chicken. As when you make Chicken Marsala, you don't cook the chicken all the way so when the sauce thickens it completely cooks the chicken while keeping it moist. I also added steamed oriental vegetables and orzo (I was out of rice). My boyfriend loved it!
