Mock Chicken Fried Steak

Would they serve this in a 5 star restaurant? no, probably not...so why the 5 star rating then?! Because for so few ingredients and so little time, this is really really good. All I had on hand was some ground beef I needed to use and was sure I didn't wan't tacos, or pasta, as most ground beef recipes are. I came across this recipe and thought "why not?" For the herbs/spices I substituted 1 tablespoon of steak seasoning and used bread crumbs instead of saltines because it's what I had on hand. Quick, easy, and filling. We put some country gravy on top. Kids loved it and I will definetly add this to the rotating menu.

Angela's Awesome Enchiladas

These were really, really good. I had never made enchiladas with the soup mixture in them, just chicken and cheese normally, so I was worried they would be runny...but don't skip the soup mixture! It gave a great texture to the enchiladas and kept the tortilla's moist. I used 10 tortillas, for 10 enchiladas. Not sure why the recipe says 5 tortillas for 8 servings. The seasonings and way the chicken mixture is prepared would be an excellent filling for tacos or burritos too. Great recipe Angela!

Slow Cooker Thai Peanut Pork

I'm eating this right now, and it's pretty darn good! It was so simple to make and my house has smelt amazing all day! I made it as the recipe states and served it over coconut rice (white rice in the rice cooker substituting coconut milk for water). I love the lime with it. It would be great with pad thai noodles as well. Is it authentic Thai? I can't say and I don't care...will definetly make again!

Herb Rubbed Sirloin Tip Roast

This rub tasted great, was simple to make since most people would have those spices around the house, and came out great. I used a tri-tip because that was what i had and since i had time i let it all sit in a plastic bag in the refrigerator to marinate for 3 hours ahead of time. I cooked as directed, but broiled the last 10 minutes to give it more crisp on the outside and tenderness on the inside. I served it with the creamy au gratin potatoes from this website and dinner was perfect. Can't wait to make sandwiches with the extra tomorrow and to try this rub on pork or chicken!

Creamy Au Gratin Potatoes

Absolutely delicious! I made 8 servings (the original recipe is 4 servings) so that I could have leftovers for the week, but there were no leftovers! They loved them and raved about them. I made them exactly as described, except, like others i added a handful of cheddar cheese and left uncovered the last ten minutes of cooking. I served it with the herb rubbed sirloin tip roast (also a recipe from this site) and my family hardly said two words at dinner...they were too busy eating!

Lemon-Orange Orange Roughy

This was so simple and quick and had terrific flavor. I love fish, but orange roughy in particular has always been a favorite. The recipe doesn't specify how much lemon or orange to use. I used a medium lemon and large orange and thought it was perfect. You won't be dissapointed with this recipe.

Slow Cooker Ham

oh my gosh...this ham was delicious. My fiance and I were stuffed but just seemed to keep eating because it was so moist and delicious. I just put it in the crockpot in the morning and did errands all day, and when i came home the house smelled wonderful and the ham was perfect! I am looking forward to making it again and maybe adding some honey or cherries to try new flavors....and my dog was SO happy to have the bone afterwards!
