Christmas Fruitcake

Very tasty! This was my first attempt at a fruitcake so I was quite anxious to unvail it and try it after it's 10 weeks of resting. Wow, is it good! I respected the recipe in it's measurements but did mess around a bit with the ingredients themselves only because I live in France and certain items are not readily available, like dried mango and dried cranberries. I did have dried cherries on hand and I added dried apricots in place of the mango. I also swaped walnuts for the pecans, once again an availability issue. But the recipe lends itself nicely to these kinds of modifications. It slices best if chilled a bit, then be sure to use a sharp knife. It's not a "pretty" cake but a plate with thin slices nicely arranged accompanied by a pot of strong coffee is a moment to remember! Merry Christmas!

Banana Pancakes I

Always searching for something to do with 2 brown bananas, I found this recipe to be a great discovery! Very quick, ingredients always on hand, the kids and husband loved them! I swamped the 2T of oil for 1T of butter & 1T applesauce. I also added a drizzle of vanilla. Simple and wonderful.

Creamy Au Gratin Potatoes

Great side dish for a holiday roast. I say holiday because it's a bit on the high fat side, which probably explains why my family was practically licking their plates!

Bill's Blue Cheese Dressing

Friends gave my husband a 4 1/2 lbs wheel of Stilton cheese they hand carried back from England for his birthday and other than just enjoying the cheese with bread I was looking for some other way to use it. Wow! What a find this recipe is! It's really the perfect blue cheese dressing. The family is going to love it. Thanks for sharing Bill!

Tuna Noodle Casserole from Scratch

I would just like to say BRAVO for stressing the fact that this is a "from scratch" recipe. I'm American but have lived in France for 27 years and have long ago stopped using commercially packaged ingredients in my cooking, first because of unavailability and then by choice, even though some of that stuff in now available. I wish all the recipes on this site that are from scratch were tagged somehow to indicate that fact. Thanks for the great recipe!

Curried Pumpkin Soup

I've made this soup a couple of times now and it's always good. Most people can't quite identify the apple which really picks the flavor up. Another variation for warmer weather is to blend it well in the blender, adding a good shot of orange juice in place of some of the water and served chilled.

Amazing Pork Tenderloin in the Slow Cooker

Just finished dinner and thought I'd get the family's impressions down right away. Over all it's a good recipe. It went together very quickly I have never had a pork tenderloin cook up as tender as this one did. Because so many reviewers warned about it being too salty I cut the soy sauce to 2T, and it was borderline salty. I cooked it for 6 hours on high because my crock pot although it's a fancy digital thing it doesn't have a choice of settings and 6 hours because I wasn't going to be around until then to deal with it. The meat was so tender that it fell apart. So I went ahead and pulled it apart, put the meat into an ovenproof dish, then I thickened the sauce with some cornflour and poured it all over the top of the meat. I had already started to make tiny new potatoes but at this point it looked so much like a "comfort" food, I pulled out the instant mash potatoes (I know, but the kids love them!) and did a big bowl up in the microwave. The kids made swimming pools in the potatoes and filled them up with the meat & gravy mixture and everybody was happy. Next time I might add some carrots and mushrooms. I'll make it again.

Bacon and Date Appetizer

I brought 60 of these to our New Year's Eve party and one pass through the crowd of 30 and they were GONE! Everyone was smiling and I got a good number of favorable comments. They were simple to make and fun to serve. A keeper!
