Cranberry Sauce I

This was so easy to make which was a big plus, however, no one raved about it at the T-giving meal today, which was a disappointment after all the rave reviews this recipe has received. My brother actually said to stick with the canned cranberry sauce. However, my father and husband liked it ok, but, again, not a rave review as expected.

Turkey Brine

My turkey turned out perfectly. I was worried it would be too salty based on what others have said, but it was not at all. Everyone kept asking how I prepared the turkey. My brother who is an "unofficial" food critic actually said it was the best turkey he has ever had. Note: I soaked the turkey outside overnight in a cooler (when adding liquid, be sure to push down on turkey in solution to get an accurate gauge if you have enough liquid to cover, as the turkey will float in salt water-hold down with heavy object for full immersion overnight) I then followed roasting instructions from :"Homestyle Turkey, the Michigander Way"(the one with vegetable broth). I included all the salt from the roasting instructions, but, still, the turkey was not too salty. It was PERFECT!

Homestyle Turkey, the Michigander Way

EXCELLENT! This was my first time hosting T-giving at my house AND my first attempt at roasting a turkey. Everyone raved about how juicy it was. My brother, who is an "unofficial" food critic actually said it was the best turkey he has ever eaten! A few notes: I brined the turkey overnight in a cooler outside. I used the "Turkey Brine" recipe found on this site. Also, my 20.81 lb turkey took only 4 hours to roast. I went to take off the aluminum foil and to check the temperature and it was already at 180 degrees in the thigh. So be sure to keep an eye on the temperature. Originally, I thought a turkey this size would take about 4 and 1/2 hours with the brining, 5 hours without. Glad I checked the thermometer when I did! Again, I highly recommend this recipe. You will be sure to impress with this one. Good luck!

Awesome Sausage, Apple and Cranberry Stuffing

This was a disappointment. After all the rave reviews on this site, I thought for sure I would hear the same from my T-giving company. Instead, it was just ok. Notes: I cooked it separate from turkey for 1 hour at 350 degrees. Per others comments, I added an extra 3/4 cup of turkey broth, which, by the way can be found on this site under "Awesome Turkey Giblet Stock". I also stirred stuffing periodically to distribute moisture evenly.

Cream Corn Like No Other

Day Before Mashed Potatoes

Tasted delicious. I served with my T-giving meal. They were a little thick and "heavy" to be served with the turkey according to one of my resident food critics, however, I will most likely make again, but, perhaps the same day instead of "day before" to see if it will make a difference.

Brown Family's Favorite Pumpkin Pie

This pie was good, but not great as I expected from all the positive reviews. I was especially disappointed because no one at my T-giving meal today cared for it, but raved over a pecan pie my mom made and a pumpkin trifle cake my sister made. The pie filling was a little too thick as opposed to being more like custard, which I prefer. However, I used a different brand of sweetened condensed milk, NOT EAGLE Brand condensed milk, which may have made a difference. So, if you are going to try this, be sure to use EAGLE brand in case that was the problem for me.

Slow Cooker Chicken and Dumplings

Delicious and so easy to make! Great for those days when you want to keep your cooking effort to a minimum, but still want to get a wholesome cooked meal on the table for the family. Note: I followed directions exactly (used 1 soup can of water) with these great results. My husband says it's a "keeper"!

Sweet Potato Souffle I

DELICIOUS! I made this for T-giving dinner yesterday and it was a hit. The coconut topping with its added crunch and flavor was a great twist on the traditional sweet potato dish. To save time, and as suggested in a previous review, I used 3 cans(15 oz each) of canned yams in place of having to cook the sweet potatoes myself. Everything else was as instructed on recipe. Yes, it was sweet like dessert, but IMO, it was not TOO sweet. Will definitely be on my holiday table every year.

Annie's Fruit Salsa and Cinnamon Chips

DELICIOSO!...Great light snack/appetizer. I made it exactly as instructed, including mixing the cinnamon sugar and tortillas. The only thing I would change for next time is to buy cinnamon chips from the store to save time and to be assured of a crisp chip.

German Chocolate Cake Frosting II

DELICIOUS! Rave reviews by all! Made 1 and 1/2 recipe for a 3-layer chocolate cake(made Hersheys "Perfectly Chocolate" Chocolate Cake found on this site,as well as on the back of Hershey's unsweetened cocoa can-highly recommend-1 and 1/2recipe for 3 layers!) Like others, added cornstarch to help thicken. If not thickening, take of stove, add pecans and coconut, and let sit for a few minutes to desired thickness. Mine was thick enough after sitting for 15 minutes.

Carrot Cake III

Unfortunately, this was not the best carrot cake I have ever had as I was hoping, based on previous reviews. I (and 4 of my friends) thought the cake was dry and bland, however, the frosting was delicious to me and not too sweet. However, my friend commented it was too sweet for him. It just depends on your personal preference.

Delicious! I have made this several times and always receive rave reviews of it. Recently, I added a cup of chocolate chips to the batter and it was a huge hit-especially with my kids and their friends. One of the kids insisted that I give the recipe to their Mom!

Foolproof Rib Roast

Definitely fool proof and delicious! My first time cooking a rib roast and received rave reviews by all. I followed exact directions with a 5.5 lb roast. I did have 3 sides that needed to be cooked at 350 degrees for 30-60 minutes, so I put those in immediately after removing the roast after final 35 minute reheating. Roast sat for an hour before carving while the sides were cooking and it was still delicious. Was exactly 135 degrees when I removed from oven and 145 degrees when I carved it. Perfect!
