Brazilian Passion Fruit Mousse (Maracuja)

This recipe is wonderful! I used a can of frozen passion fruit juice instead of fresh and it was still fabulous. This recipe is a keeper. UPDATED VARIATION: I have tried this with limeade concentrate and it is great! I pour it into two graham cracker pie shells and let it sit for three hours to overnight before serving. It makes a light, tart summer treat.

Black Bean Salsa

Great recipe - but needed taste modifications: I added lime juice (1 squeezed lime), chili powder, cumin, black pepper and a dash of cheyenne pepper. I added cilantro straight into the salsa rather than as a garnish. Yum-malicious!

Cream of Pumpkin Soup

Fantastic, easy, tastey recipe. I doubled the spices (not the salt) and it was perfect. I also added 2 tsp of green curry powder which turned out to be a nice addition.

Chinese Cabbage Salad II

Great side salad to any Chinese dish. As a suggestion, I would add noodles just before serving to keep them crispy. Not good served as leftovers...too soggy.

Mongolian Beef I

Fabulous! I added more red pepper, only because we like spicey - I also added honey to even out the saltiness of the soy sauce. Ginger, garlic and sesame oil compliment well, too.

Peanut Butter Cup Cookies

Fail-proof. I followed the directions and everything turned out perfectly. ADVICE: freeze (or put in fridge) unwrapped PB cups - it is easier to press the frozen candy into the hot cookie without falling to pieces. SUPERB!

Wonderful cookie - not too sweet, either. I chose not the chill the dough which did not seem the affect the cookies at all. 7 minutes baking time is all I did and they were perfect!

Amazing recipe! Suggestions: use light olive oil instead of veg oil. I threw in sun dried tomatoes (in place of fresh), artichokes and pine nuts. It turned out great!

Banana Oatmeal Cookies I

Two thumbs up! I made some modifications the first time around: I used only 1/2 c. butter and added large chunks of apples instead of choc chips. I used 1 tsp of pumpkin spice in place of cinnamon. PERFECT! The cookies were fruity, moist and delicious. Thanks!

Fresh Broccoli Salad

Wonderful recipe! Modifications: 1/2 c. mayo (instead of 1 c.), 1/4 c. sugar (instead of 1/2 c.). I did not have raisins and used dried cranberries which colored the salad beautifully. This recipe is a keeper!

Oven Pot Roast

Fantastic! Modifications made: low sodium cream of mushroom soup, one whole sliced onion (I did not have the dry soup mix). I added a lot of pepper and fresh crushed garlic to the gravy. Yumalicious!

Crazy Crust Pizza Dough

This is definitely more like flat bread, but it was still very good. I used 1 c. whole wheat flour and 1/2 c. white flour, added garlic powder and Italian seasoning mix in the dough mixture. Great stuff!
