Jenn's Out Of This World Spaghetti and Meatballs

Reviewed: Jan. 23, 2008
Great basic recipe. I have a homemade sauce that I like to use, but I used the meatball recipe- cooked in the sauce - and it turned out great! I did not change anything but will definitely experiment as always. Thanks!

Roasted Lemon Herb Chicken

Reviewed: Jan. 14, 2008
This turned out great, although I didn't follow the recipe exactly. I didn't have any lemon juice so I sprinkled lemon pepper all over the chicken, sprayed olive oil over the top and then added 1. cup of chicken broth at the bottom on the roasting pan (make the chicken so much more moist than without). I will definitely make this more often, even trying as written when I get some lemon juice!

Parmesan Herb Chicken

Reviewed: Jan. 3, 2008
Yum! Great recipe - I substituted 1/2 the butter with olive oil and added a little bit of Italian bread crumbs with the Parmesan cheese. I didn't have whole chicken breasts on hand, so I used chicken tenders which taste the same! This recipe was easy and fast and I will use again. Thanks!

Brown Sugar Meatloaf

Reviewed: Jan. 2, 2008
Changes: used 1/4 c. brown sugar. Half cup was too sweet, although we still gobbled it up with no problem. I also used 1/2 cup milk instead of 3/4 cup. I added some Cracked Peppercorn A-1 sauce for fun as well. Even with my slight changes I still give this recipe five stars because it was really amazing and we really enjoyed how moist and delicious it turned out. This really is the best recipe I have used so far and I will be making this many times.

Easy Cheese Ball II

Reviewed: Dec. 27, 2007
Easy and pleasing. I did find that the taste of the cheese ball was better the second day for some reason - I am thinking because the ranch mix had time to flavor the cheese nicely and didn't taste gritty. The recipe was huge so I made two balls, rolling one in slivered almonds and one in chopped green onions. Yum!

Savory Crescent Chicken

Reviewed: Dec. 27, 2007
Wonderful! I didn't add the pimentos because I didn't have them, but I did add one can of cream of mushroom soup to the cream cheese mixture (for the husband)and added peas and it was a HIT! No complaints, just silent gorging at the dinner table. I will definitely make these many times as they were quickly devoured and much appreciated.

Marinated Flank Steak

Reviewed: Dec. 27, 2007
The flavor of my steaks turned out fairly tasty even though I only had two hours to marinate. So I am sure that overnight marinating will be great when I try this next. My only complaint is that my meat turned out a little tough for my taste, but I believe that it is because I am an unexperienced beef cooker. I will definitely try this again.

Bella's Rosemary Red Potatoes

Reviewed: Dec. 27, 2007
I have used this recipe so many times over the years. I do find that fresh rosemary is best, but is strong and needs a little less than the recipe asks for. Dried rosemary works just as great, too. I use more EVOO (extra virgin olive oil) than butter and chop my potatoes in smaller, bite-sized cubes for faster cooking.

After-Thanksgiving Turkey Soup

Reviewed: Dec. 27, 2007
Very delicious! I did not have any half and half on hand so I omitted that and used milk instead...nor did I have celery but used celery seed for flavor. Still, the soup turned out incredibly tasty and makes a wonderful, warm meal that is filling and simply delicious.

Easy Sugar Cookies

Reviewed: Dec. 23, 2007
There really isn't anything that I can suggest to make this recipe any better or easier. My cookies turned out perfect - no complaints here. The only thing I may have done differently is that I rolled the dough a little thicker because I like my cookies thick and chewy. This recipe is a keeper.

Busy Day Chicken Rice Casserole

Reviewed: Dec. 10, 2007
Great recipe. I appreciate that the ingredients are common - making it quick to put together. For better flavor I used CREAM OF CHICKEN & HERBS soup and one can of BROCCOLI CHEESE. The plain cream of chicken or mushroom does not have much flavor at all. I also used more water as others suggested so that the rice was cooked thoroughly. I used a WILD RICE mix (white, brown and wild rice) instead of just white rice, and topped with crushed whole wheat crackers. GREAT! Will definitely make many more time.

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Nov. 28, 2007
This recipe is wonderful and easy! I used equal amounts of milk & dark chocolate, only because that is what I had, and it still turned out a hit! I was worried because I was not sure if the marshmallow, milk, sugar, butter mixture was a full boil. I only saw small bubbling, but I interpreted that as boil and continued to stir for about 7 minutes and decided to go for it. I topped my fudge with white chocolate chips that were green striped and red striped for a more Christmassy look. Everyone loved them and asked for the recipe!

Comforting Cube Steaks

Reviewed: Nov. 22, 2007
This is a pretty good recipe. The first time I made it I did not add anything, but made it according to the original recipe. The second time around I added more flavor by adding Worcestershire sauce, garlic and onion powder, too. I liked that flavor better. Easy to make and will most definitely make many more times.

Peppy's Pita Bread

Reviewed: Oct. 28, 2007
These are ok, but I didnt' have the success that I was hoping for, but I am not giving up because I know that it was "user error" and not the recipe. I will for sure try this recipe again because I prefer homemade anything over store bought. Thanks!

Pumpkin Spice Cake with Cinnamon Cream Cheese Frosting

Reviewed: Oct. 28, 2007
The cake is superb - very moist and delicious. The first time making it I did not care for the frosting mostly because there was too much cream cheese and not enough powdered sugar. My second attempt was much better because I used "Cream Cheese Frosting II" from this site, added pumpkin spice to the frosting and it was perfect. I will definitely use this recipe many more times for the Fall season.

No-Fuss Pumpkin Cake

Reviewed: Oct. 28, 2007
Oh geez, you just can't go wrong with this recipe. The only thing I added was pumpkin spice and it turned out fantastic! 10/2009 UPDATE: If you add about 1/2 cup more pumpkin the cake turns out really, really moist. Spice cake works fabulously - just leave out the spice.

Light Wheat Rolls

Reviewed: Oct. 15, 2007
Wow, wow, wow!! These rolls came out perfectly - and so easy. I followed the directions exactly for preparing and baking. I did end up using more whole wheat flour and less all-purpose flour, and used HONEY in place of the sugar, which I think always tastes better in bread or rolls. Fantastic recipe - this is a keeper and I will use it often.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Sep. 16, 2007
Great recipe! The only substitution I made was pumpkin spice in place of cinnamon (because I did not have any) and still turned out mouth-watering delicious. Per other's suggestions I only baked for 8-9 minutes so that the cookies stayed chewy, avoiding "puck-cookies". Yummalicious : ) Two thumbs up!

Black Bean and Couscous Salad

Reviewed: Sep. 13, 2007
Fantastic fail-proof recipe! This was just so easy to make, and the taste was perfect. The second time around I added some chili powder and it was great. We used it to wrap in corn tortillas and also with chips. Absolutely wonderful! SAVE!!!
