Japanese Onion Soup

Great soup! Very similar to Japanese restaurant style. I used better than boullion and sliced button mushrooms. I think the pre-made fried onion rings are great in this as well. Important to allow the veggies to simmer and flavor the broth. You can also add dried noodles to the simmering broth for a heartier soup, but the beauty of this is the simplicity of clear soup. Loved it!!!!!

Coconut Shrimp I

Oh my goodness...this is delicious as written. Fun to prepare and you can then stick em in the fridge and go to the pool/beach/mall until you're ready to cook em. When you FEBruary (flour egg breadcrumbs, I.e. Coconut FEC), I suggest pressing in coconut to make it adhere. Don't fear the coconut. I'm not a huge fan of the stuff but I put a lot on and these were fab. I sprinkled the finished product with a SMALL amount of salt. Fam loved it with out sauce.I loved it with some balsamic fig preserves sitting in the fridge, but also loved it without sauce. Trust a southern girl; fry at 350 and you will be loved.

Goat Cheese Stuffed Tomatoes

This was great! I didn't follow exactly, as my tomatoes were small and I had limited ingredients. I mixed herbed goat cheese with bread crumbs, jarred roasted peppers (diced), olive oil and some dried basil and stuffed the tomatoes. Topped with some grated asiago, but I think parm would have been better. Anyway, a delish basic recipe! You could add protein as others have suggested and have an entire meal. It is super quick and easy! I think fresh basil would have made it a knockout, I just didn't have any.

Sausage and Bean Ragout

LOVED this! Hearty and makes the house smell great. I halved the recipe and used a little extra stock to make it more soupy (just a personal preference). The spinach in it is fabulous, but I would imagine if you don't have any it would still be fantastic without. I was not sure about "cooking the pasta until done" with the heat set on low, so I boiled my pasta separately and added right before the spinach. Oh, and I only had bowties on hand. A little red pepper flakes for my taste was great, too! YUM!

Kettle Corn

Yummy! I burned the first batch due to eating only microwave popcorn for so long and forgetting how fast this pops. I followed the recipe exactly and loved it. There was some splattering but I used a stockpot so it was o.k. I think a skillet will be easier to manage next time. My kid loves it! I like the review that suggested adding some salt along with the sugar and will try that next time. Thanks for the recipe! I did not know kettle corn was just white sugar, figured you need corn syrup or something. Excellent!

Clay's Grilled Beer Can Chicken

Very good rub! I opened the beer and pored out about an ounce. I personally set the grill to high for the first 10-15 mins to ensure crispy skin. Then I turned down to 350 until it hits 160 degrees. It came out tender and delicious! The smoky paprika with the tinge of heat and sweet is great! Remember to rest for 5 mins to redistribute the juices and your bird will come up to 165 degrees. Perfect!

Lebanese-Style Red Lentil Soup

Really good and easy! Followed recipe almost exactly, just subbed fresh parsley for the cilantro. I added lemon juice. I actually tried a taste w no lemon juice, then one with the fake lemon juice (didn't do a thing), then the fresh lemon. Definitely use fresh lemon! Yum!

Barbequed Cabbage

THis was so good! I cooked mine a bit longer because I prefer softer cabbage. I was skeptical about the soy sauce but it is just perfect! I ate a wedge for lunch and it was very satisfying. Just added a few cloves of garlic and a piece of onion to the pouch. Thanks for sharing!

Zucchini in Sour Cream Sauce

Really good and easy! I would double the sauce if you plan to serve over pasta. Thanks for a great way to enjoy zucchini! My picky kid loved it even though she thought she "hated" zucchini.

Very Special Spaghetti Sauce

Thank you for sharing! I tweaked due to on hand ingredients but stayed as true as possible and loved it! In case you all don't know, you must brown beef on high heat; otherwise you are sweating it. Get it good and brown so it will hold up for simmering. Delish and easy to modify for kids/dietary needs.

Emma's Belgian Waffles

These are just fantastic. My kid is a Southern Waffle House style waffle lover and she said these are even better than theirs! I have an old, cheap waffle iron and they come out perfect! I rarely have time to allow the batter to sit, but either way they are soooo good!

Delicious! Prepared as written, just decreased the quantities a little since it was just for me. Very earthy and comforting. Perhaps a splash of beer would be a nice addition?! Will try next time. Yum!

Chickpeas in Tomato Sauce With Feta and Wine

VERY good! I, too, had some chickpeas and feta and not much else in the kitchen, so I tried it. Followed the recipe precisely and loved it! You could make it a meal by adding a starch or protein, or eat it right out of a bowl, as I did.

Baked Potato Skins

Awesome! The spice/oil mix was perfect! Hubby said they are the best ever - even compared to restaurants. (And he's picky!) Had these for 1st Ga Dawgs football game this season and they were a huge hit!
