Refreshing Cucumber Lemonade

I have made this several times since finding the recipe and love it. I have added more water to get the flavor I wanted. I also mix a cup of water with the unpeeled cucumber in the blender to make the blending process easier. I don't mind a little cucumber pulp getting through a mesh strainer, but putting a coffee filter in my strainer creates a more refined drink. This also goes nicely with Grey Goose.

Greek Lemon Cake

As others commented, this cake is a little on the labor intensive side and I used all my mixing bowls but it was well worth it - moist, lemony and delicious! I made it in two 9" cake pans, sliced the layers and used lemon cream cheese icing and blueberries in between. Unbelievable! I trimmed the layers just to have some to all to myselfe while I was icing the cake.

Home Style Macaroni and Cheese

I made this for a family gathering and it merited 2nds and 3rds. I used a 16 oz box, added 1 cup each of colby and mozzarella and 1/4 cup parmesan. I subbed mustard powder for digon. Added more milk to desired consistance and only used 1/2 cup bread crumbs. It was good enough to mix and eat without baking, so I had a small bowl before the rest went into the oven. I topped it with a little more mix of shredded cheeses also. Top notch comfort food.

Pumpkin Chocolate Dessert Cake

I baked this as cupcakes on a convection setting and didn't have any problems with needing more baking time. I did cut back a little on the sugar and replace part of the butter with olive oil. They turned out well and I will make them again.

Hot Pepper Jelly

I made this with red bell peppers and hot carribean red peppers (seeded). I added an extra cup of sugar and 2 pkgs of sure gel and it turned out fabulous. Very hot, but wonderful and a beautiful bright red.

Jalapeno Strawberry Jam

I made a hot version of this by reversing the amounts of strawberries and peppers. I used Carribean Red Peppers and I love how it turned out. Hot that hurts in a good way!

Marshmallow Fondant

The recipe gets five stars even if I only give myself 3 for my fondant skills. I have decorated cakes with buttercream but always thought of fondant as difficult and unforgiving. Not so with this recipe. It was easy to make and with a little practice I'm sure I can churn out something photo worthy.

Chocolate Cappuccino Cheesecake

Sensational flavor and the family devoured the entire thing. The only problem I had, which might have been resolved to sticking it in the freezer for a few minutes before serving, was that it came apart and was very messy to serve. Mine had a more mousse like texture.
