Hot Pepper Jelly

I made this with red bell peppers and hot carribean red peppers (seeded). I added an extra cup of sugar and 2 pkgs of sure gel and it turned out fabulous. Very hot, but wonderful and a beautiful bright red.

Zucchini Brownies

These did turn out very cakelike and moist for me. I was happy with the results and will make them again. I did add a couple of egg whites to the batter because was simultaneously making ice cream and hated to waste them.

Grilled Zucchini II

We do this all the time, not just with zucchini, but also with peppers, onions, even green tomato slices. It's always a quick and easy answer to what goes with dinner on the grill.

Chocolate Cappuccino Cheesecake

Sensational flavor and the family devoured the entire thing. The only problem I had, which might have been resolved to sticking it in the freezer for a few minutes before serving, was that it came apart and was very messy to serve. Mine had a more mousse like texture.

Blueberry Cheesecake Ice Cream

Family thought it was delicous, but I wanted more cheesecake flavor. I don't think it helped that I used frozen blueberries. It was good, but next time, I will try less sugar and perhaps swirl in a bit of graham crust.

Home Style Macaroni and Cheese

I made this for a family gathering and it merited 2nds and 3rds. I used a 16 oz box, added 1 cup each of colby and mozzarella and 1/4 cup parmesan. I subbed mustard powder for digon. Added more milk to desired consistance and only used 1/2 cup bread crumbs. It was good enough to mix and eat without baking, so I had a small bowl before the rest went into the oven. I topped it with a little more mix of shredded cheeses also. Top notch comfort food.

Refreshing Cucumber Lemonade

I have made this several times since finding the recipe and love it. I have added more water to get the flavor I wanted. I also mix a cup of water with the unpeeled cucumber in the blender to make the blending process easier. I don't mind a little cucumber pulp getting through a mesh strainer, but putting a coffee filter in my strainer creates a more refined drink. This also goes nicely with Grey Goose.

Pumpkin Chocolate Dessert Cake

I baked this as cupcakes on a convection setting and didn't have any problems with needing more baking time. I did cut back a little on the sugar and replace part of the butter with olive oil. They turned out well and I will make them again.

Light Oat Bread

Easy and good bread recipe. I used 2 parts white and 1 part wheat flour and rather than 1 cup oats - 1/2 cup oatmeal and 1/2 cup ground flax and it still turned out great.

Marshmallow Fondant

The recipe gets five stars even if I only give myself 3 for my fondant skills. I have decorated cakes with buttercream but always thought of fondant as difficult and unforgiving. Not so with this recipe. It was easy to make and with a little practice I'm sure I can churn out something photo worthy.

Jalapeno Strawberry Jam

I made a hot version of this by reversing the amounts of strawberries and peppers. I used Carribean Red Peppers and I love how it turned out. Hot that hurts in a good way!
