Janet's Rich Banana Bread

Great recipe! I used plain yogurt instead of sour cream and 3/4 cup brown sugar, mashed 2.5 bananas and baked it in two slightly smaller loaf pans for just under 50 minutes. So freaking good!

Irish Soda Bread in a Skillet

Fantastic recipe. I substituted about 2/3 cups of whole wheat flour, added a dash more salt and baking soda to accommodate, and added 1 tablespoon maple syrup just to add a hint of sweetness. I increased the baking time to 25 as others have suggested, and it was a delicious accompaniment to leek and potato soup for St. Paddy's Day dinner.

Russian Mushroom and Potato Soup

Wow, this was good! For something slightly different I think I'll add some clams and fish for a chowder, but it's definitely wonderful as is. I've made this several times now, substituting sour cream for the half-and-half. The last time I made it with fresh chanterelles and portabellas and OMG did that ever kick it up a notch! The wild mushrooms make it absolutely phenomenal.

Chile Verde II

Great recipe. I wanted to make a vegetarian version so I skipped on the pork, added potatoes, white kidney beans and black beans and omitted the stock, then served it with grated cheese and sour cream. It was very tasty, but even better using the leftovers as a nacho topping!

Smooth Sweet Tea

I've reduced the sugar to just a little over 1/3 cup. This tea, in all of its forms (black, green, fruity or not) got my family and friends through the hottest days of the summer. Love it!

Big Soft Ginger Cookies

Not soft once they've cooled, but still very good! I used about one and a half tablespoons of ginger, orange juice instead of water as other reviewers suggested, and butter instead margarine and these came out wonderfully.

Chipotle Shrimp

I've made this many times now and I can't get enough. My hubby and I are chileheads, so I add about another chipotle, increase the red wine to half a cup or more, add the juice of one lime and garnish with a couple handfuls of chopped cilantro. I only add salt to taste as the butter and worcestershire sauce (and the shrimp themselves, for that matter) are quite salty on their own.

Gramma's Date Squares

Very, very good! Until recently, I didn't even think I liked dates, until I tried (relatively) fresh ones. And those dates made awesome date squares with this recipe. I didn't add the extra 1/3 cup sugar to the dates and I dotted the top crust with extra butter. My boyfriend, also not a fan of dates, loves them! Yay for Michelle's Gramma!

Banana Oat Muffins

This was a good base recipe. I used half a cup of plain yogurt and a quarter cup of milk, 1/3 cup of butter instead of the oil, 1/2 cup brown sugar instead of white and added 1/4 tsp orange rind, 1/8 tsp allspice and 1/8 tsp nutmeg to up the flavour impact.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

Love it! It was like eggplant parmesan disassembled. I used half a can of diced tomatoes, half a can of puréed, red wine instead of the broth and Greek feta instead of the plain goat cheese, and added some dried oregano and basil. With a baguette and a glass of wine, it made a lovely meal.
