Irish Soda Bread in a Skillet
Fantastic recipe. I substituted about 2/3 cups of whole wheat flour, added a dash more salt and baking soda to accommodate, and added 1 tablespoon maple syrup just to add a hint of sweetness. I increased the baking time to 25 as others have suggested, and it was a delicious accompaniment to leek and potato soup for St. Paddy's Day dinner.

Russian Mushroom and Potato Soup
Wow, this was good! For something slightly different I think I'll add some clams and fish for a chowder, but it's definitely wonderful as is. I've made this several times now, substituting sour cream for the half-and-half. The last time I made it with fresh chanterelles and portabellas and OMG did that ever kick it up a notch! The wild mushrooms make it absolutely phenomenal.

Chile Verde II
Great recipe. I wanted to make a vegetarian version so I skipped on the pork, added potatoes, white kidney beans and black beans and omitted the stock, then served it with grated cheese and sour cream. It was very tasty, but even better using the leftovers as a nacho topping!
