Creamy Rice Pudding

This was delicious! I made it dairy free by using cashew milk and omitting the butter. I also used brown rice, which worked great.

Elvis Smoothie (Almond and Banana)

Great smoothie. I have tried it a few times, and adapted based on my needs/what I had available. I subbed in dairy-free milk (almond and cashew), and used peanut butter once. I even threw in some spinach to make it a green smoothie one time. All variations have been delicious. Next to try - bacon!

Summer Fresh Tomato Basil Dip

I really liked this recipe. However, I adapted it quite a bit, based on my needs. I used a cashew cream and extra lemon juice instead of the dairy ingredients, and omitted the parsley, since I had none. It turned out great!

Cucumber Tomato Salad with Zucchini and Black Olives in Lemon Balsamic Vinaigrette

The lemon in this recipe totally makes it!! I've eaten similar salads often, but this one blew my mind. I used kalamata olives instead of black, and grape tomatoes instead of large ones. Also, omitted the thyme b/c I had none. I didn't add sugar either, didn't feel like it needed it. Just a note - I loved it fresh, but the leftovers weren't *quite* as incredible. However, I am so excited to make this recipe again and again!

Quinoa Salad with Grapefruit, Avocado, and Arugula

Loved this recipe! I adapted a bit, to make it my own, based on what I liked/had available. I cooked the quinoa in 2 c water instead of 4 c, added onion/garlic powder and cayenne pepper to the water (didn't have fresh ingredients on hand). Also, halved the amount of cilantro, upped the lime juice after tasting, and doubled the avocado. Used half arugula and half spinach. Used extra cranberries too. It was amazing!

Dulce de Leche

I made this DAIRY FREE (w/ homemade almond milk) and it was wonderful! Haven't had real dulce de leche in a long time, so I don't know how authentic it was, but I LOVED it! I cut the recipe waaaaay down, and used a splash of vanilla extract, but otherwise followed the directions. It took about 45 minutes of stirring for me. I'm so excited to make this again, to top my incredible pumpkin cheesecake!

Fireman's Sour

Pretty good. Kind of had a cough syrup undertone (I see a lot of similar responses to drinks with grenadine and alcohol), so I added a splash more lime juice and a bit of club soda. Made it much tastier :)
