Black Forest Cookies

Pretty good cookies but not earth shattering. Extremely easy to make, no need to get out the stand mixer or the hand mixer. Thought it seemed like a little much to use an entire bag of Choc Chips and an entire bag of Craisins but it wasn't too much at all. Chocolately, nutty, chewy from the Craisins, pretty good! The cookies are not overly sweet by any means. Good cookies but skilled bakers could EASILY improve this recipe. I am just not one of those people so I cannot offer any great tips here. Might add a bit more sugar for a bit more sweetness. By the way, had regular Craisins, not the cherry ones, maybe the cherry adds a needed sweetness or dynamic flavor that I was missing. Either way, good cookies but not the best cookies I've ever had but definitely the easiest/quickest cookies I've ever made. Certainly worth a try!

Blue Cornmeal Pancakes

These were really great pancakes. I was a little worried about the corn meal but it added a fantastic texture and taste making the pancake much more unique. I suggest cooking in butter for flavor, delicious with syrup. I used yellow cornmeal because that's what I had on hand. I think be careful to leave on a little longer than you might think to make sure center is cooked through. Will make these again!

Banana Bran Muffins

I used another reviewer's modified, healthier version of this recipe and it was great! I did almost exactly what she said except I used 2 eggs instead of one (used egg beaters 1/4 cup = 1 lg egg) and I used ALL whole wheat flour. I also had to buy All-Bran cereal as I could not find Wheat Bran, I smashed the Wheat Bran flakes up and it worked perfectly. I also added Walnuts as the original recipe said. The muffins turned out great, they are moist and lightly sweet but have that light salt taste of a good bran muffin with a little crunch from the walnuts. Definitely not dry. Probably would not be dry if you only used 1 egg. I used 3 bananas and a 1/4 cup brown sugar. The muffins are definitely most and delicious. Great healthy quick recipe!

Spinach and Leek White Bean Soup

Super easy to make and pretty tasty. I will agree it was a little bland at first bite but add a little more salt, pepper and some Parmesan and you're good to go. Could not find whole wheat couscous so I used regular. I will also agree it wasn't really a soup, would definitely need more chicken broth for that. I did not add more though, I liked it as it was. Super healthy and quick to make, will make it again.

Amazingly Easy Irish Soda Bread

Very easy to make, basically no clean up with a stand mixer. I added raisins and wish I had added A LOT MORE, I did just a few handfuls. The sweetness of the raisins really helped the bread taste better, made it a little more special. I feel like this bread is a little dry too. I do not know if this is because I used about 2 cups regular flour and 2 cups whole wheat flour. I have never baked with whole flour before so I am not sure how much it changes the taste or moisture of bread. I also baked on 350 instead of 375 for 40 minutes, then 20 more minutes. I brushed it three times total with the butter and buttermilk mixture. It was definitely tasty bread but I wish it had been more moist and sweeter. I would make it again though with more raisins, not sure what I would do to make it more moist though.
