Balsamic Roasted Pork Loin
This was wonderful! I am in the process of making it a second time. The only change that I made was to cut the marinade recipe in half. It definitely does not need a whole cup of marinade for a roast this size. Our 2 pound roast fit perfectly in a 1 quart Ziplock bag. I put the roast in, then poured in the marinade (which was 1/4 cup of EVOO & 1/4 cup balsamic marinade plus 1 T steak seasoning) squeezed out the air and zipped it up. I used Costco steak seasoning which was too salty for us when used alone on a steak but when mixed with the balsamic vinegar and oil it was perfect! I am also delighted to find a way to use it up too.
