Light and Fluffy Spinach Quiche

The only ingredients I followed exactly were the mayo, milk and eggs. I modified everything else by adding additional ingredients (bacon, mushrooms). Great taste. Not too heavy. Even though the pie was baked through after 45 min when I cut into the quiche I noticed the bottom of my crust was not :( Although I'm not sure how it would work, I may pre-bake my crust for a bit before adding the egg mixture next time I make it.

Easy, quick and yummy! Easy to modify herbs too for different tasting bread. I would pat thinner to try as a pizza crust sometime too.

Angela's Awesome Enchiladas

Spread refried beans on the tortillas before placing chicken mixture. Left out the olives. Substituted lemon juice for the lime. Even more amazing the next day!

Scones

Wonderful recipe. Very simple. Used suggestions written below regarding egg/milk to equal one cup. I really only used about a half cup of the mixture though. Added some lemon zest and about 1/2 tsp cinnamon as well as Vanilla extract. Used food processor to cut butter. Later I put 1 cup blueberries in food processor and pulsed briefly then added to dough. Turned out great! Made glaze out of lemon juice and powdered sugar. Drizzled over a few. I couldn't have asked for a better scone.

Pecan Pie V

Easy recipe and great taste. I added about 1 1/2 cups chopped pecans and placed about 1/2 cup pecan halves around outer edge of pie and center for decoration. I'm glad I did. It would have looked a bit unappetizing. Followed suggestions from other reviewers and baked 10min at 400 and then 50min at 300. I was scared it was over baked but it turned out very nice.

Easy BBQ Flank Steak with Chipotle Mayo

Great flavors. I marinated overnight but should have pounded the meat with a tenderizer first. The mayo was very spicy. I'll just use chipotle powder next time.

Gingerbread Pear Cake

Beautiful cake. I used canned pears and cut up one fresh pear to fill in. Personally I thought the cake was too heavy, sweet and rich and actually may have liked it more using a spice cake mix rather than the gingerbread cake mix the recipe calls for. I wouldnt make it again.
