Nacho Dip I

I made this for a Super Bowl party, and it was a hit! And, it was really easy to make. Just one word of caution: MAKE SURE that your cream cheese is room temp before you try and mix it with the cream cheese....otherwise, you are going to have a lumpy mess!

Best Football Dip Ever

If you add 2 Tbsp from a packet of taco seasoning to the cream cheese, and the remainder of the package to the meat (I even used ground turkey instead of beef)...this recipe is a winner!

Slow Cooker Chicken Stroganoff

Ok, I was skeptical about this one....but my goodness what a pleasant surprise! I literally threw 4 frozen chicken breasts (whole not cubed), the butter and dressing mix in the crock pot and left the house. When I came home, the place smelled amazing! I used the "healthy request" soup and low fat cream cheese and it still turned out creamy and decadent! And the chicken was so tender!! This recipe is now on constant rotation in the house...and pleases everyone from my husband to my teenage son, to my 16-month old daughter. If only every recipe was this easy!!!

Baked Potato Soup I

This soup is amazing!! I made this on a cold evening when we had company over...and there wasn't a spoonful left! After reading quite a few of the other reviews, the only alteration that I made to the recipe was instead of 2/3 cup butter, I used 1/3c butter and 1/3c of the bacon grease...it sounds kind of icky, but the flavor of the soup was unbelievable! And, if you cook the butter/grease and flour for a minute or two (stirring constantly) after it starts to bubble you will loose the "floury" taste that others have talked about.

Ok...I know that it sounds like an odd recipe, but give it a chance. My son is taking a "home ec" class and had to find a recipe to prepare on his own for his family. He chose this one, and I was skeptical to say the least. Long story short...it was fabulous. He prepared it exactly as written, no additions or alterations. And if an 8th grader can make it, so can you! We ate it all, no leftovers. And my son got an "A"!

Maria's Stuffed Chicken Breasts

This recipe was great...with a little tweaking. After reading the other reviews, I realized that it was going to need a little extra flavor. So, I pounded out the chicken breasts until they were thin, and then dipped them in egg and coated one side of the brests with a 1/2 and 1/2 mixture of italian seasoned bread crumbs and grated parmesan cheese. I quickly fried the breaded sides in a skillet with olive oil and then spooned on the cheese/spinach mixture rolled them up and baked them. They were a hit! Oh, and only make 1/2 of the cheese mixture....otherwise it just goes to waste.

Lime Chicken Soft Tacos

This dish is on permanent rotation in my house. My son actually requested that I cook this for his birthday dinner instead of going out to eat!! No changes to the recipe are necessary...it's delicious!

Chicken Fried Chicken

I have always been too intimidated to fry chicken...but months of cravings finally beat out my fears. This recipe was super easy. I made a couple of additions....3/4 tsp of cayenne pepper to the breading mixture, and after beating the egg I mixed in a dash of onion salt, garlic powder and a little more cayenne pepper. Delicious!

Grilled Asparagus

Chicken and Bacon Shish Kabobs

This was amazing!! The entire family...even the picky ones...devoured every last piece. The only change I made was to add one clove of garlic to the marinade. This recipe is a keeper!!

Quiche Lorraine I

This was superb!! As suggested I added an additional egg, used only 1 cup of half & half, and cooked for an additional 5 minutes. Even my son...who doesn't like ANYTHING...loved this recipe!
