Hot Orange Coffee Cake

Reviewed: Dec. 15, 2006
I doubled the recipe and added an extra 1/2 cup of sugar and added my own favorite cinnamon/oat crumb topping. Instead of a 10" pan, I divided the batter into 12 jumbo muffin pans and the end result were very cute mini cakes. The cake itself was very moist and rose high but it was not sweet enough at all and was a bit too oily. If I had not added the extra sugar it would have tasted like bread. If you make this for breakfast and are not expecting something sweet it is ok but if you are comparing it to a traditional coffee cake it loses big time. I may try again with an additional cup of sugar and less oil and see what happens.

Best Ever Chocolate Cutout Cookies

Reviewed: Dec. 13, 2006
This is very chocolatey but I too had the crumbling problem another reviewer described. Maybe it was becaused I used shortening instead of butter? I found that the dough looked great to use once I made it but followed the directions and put it in the fridge for 2 hours. I think I should have used it right away instead. I added a little water to the dough to get it pliable again and heavily doused my rolling surface with cocoa. Usinga spatula to remove the cut outs solved the crumbling problem and the baked very nicely in exactly 8 minutes. I think I will try this recipe again but not refrigeratethe dough because I like the intensity of the chocolate flavor and the cut-outs etained their shape perfectly after baking.

Peanut Butter Temptations II

Reviewed: Dec. 13, 2006
These were easy to make and tasted good but were very heavy and a little oily. I made some with PB cups and some with jelly like another reviewer suggested and it cut the heaviness a little but was too sweet. They look really cute and I love peanut butter but I don't think I will make them again.

Grandma's Gingersnap Cookies

Reviewed: Dec. 13, 2006
This recipe is awesome! I didn't realize I was out of molasses so I used honey and added 1/4 tsp all spice and it was just delicious! I love softer cookies so I took out the cookies after 10 min but left a batch in for 13 min for my hubby. I got soft melt in your mouth goodness and he got his crispy crunch fix. I can't wait to try these with molasses! Thanks for a great recipe!

One Bowl Chocolate Cake III

Reviewed: Oct. 31, 2006
This is very yummy and very moist! Stayed moist for days. I rated it 4 stars though because it took a lot longer to cook than noted and didn't hold up well to being frosted - wayto delicate & crumby. I made cupcakes and I had a hard time taking them out of the pan without squishing them. If all you care about is taste and just want to serve this to your family - this is an excellent recipe but use good cocoa. I don't recommend if you want to have a "professional finish" product.

Hot Cocoa Mix

Reviewed: Oct. 31, 2006
I made 2 seperate batches of this mix with 2 different types of cocoa and they both came out very different. Surprisingly, Hershey's cocoa yielded a richer, more chocolatey cocoa (which in turn required more sugar) than the more expensive cocoa. This could be a reason why different people had different results. I rated this 4 stars because of the adjustments I made (increased cocoa to 2 cups, and sugar to 6. Added 1 tsp salt. I also used nonfat dry milk so I increased the cremora by 1/2 cup for a richer taste.) I also followed the suggestion of sifting my ingredients and grinding the dry milk to fine powder. Thta helped reduce the "mud" in the bottom of your cup and made for a creamier texture. In my opinion this compares to the mixes you buy from the store but I like the control over what you put in it. I made one batch with hazelnut creamer and that came out really good - tasted like the Landolakes version. Thanks for a versatile recipe! **new note added 12/3** I made a mocha flavored batch by adding 10 TBS instant coffe ground up, extra cup of sugar and cremora each and 1/2 tsp dried vanilla powder and it was a big hit!
