Chef John's Classic Beef Stroganoff

Made this last night and omg, it was delicious! It was actually my first time ever having beef stroganoff and I was sold. My husband, who grew up on it made with Cream of Mushroom soup was in heaven. I also used homemade creme fraiche, another of Chef John's recipes, and will never go back to store-bought sour cream again!

Coconut Curry Chili

This was too sweet for my taste. I used hot curry powder thinking it would balance the sweetness but that didn't work so well. This is more like a curry for gringos recipe. Won't be making this again.

Super-Delicious Zuppa Toscana

Wow, I've never had the restaurant's version but this was bomb diggity! So comforting and delicious and full of flavor! It was boyfriend approved as well...great for a chilly day or evening. I used spicy Italian sausage - I always do for any recipe asking for Italian sausage. Try Trader Joe's...it's my favorite. And I used kale instead of spinach. Wow, what a great way to showcase kale! For potatoes, I used German Butterball potatoes from my CSA box. Slam dunk! Definitely a keeper :)

Sausage, Peppers and Spaghetti Squash

This recipe was delicious! The boyfriend had to stop himself from eating the whole thing. I made some substitutions - hot italian sausage instead of sweet because we both love spicy. And red wine vinegar instead of sherry. This was the first time I ever had fennel and spaghetti squash too. I was very impressed. Definitely a keeper and going in my recipe box!

Tomatillo Soup

This recipe was good! I thought the recipe was a little bland at first (hence 4 stars instead of ) so I added a few dashes of cumin and a couple of teaspoons of chicken boullion. I topped each bowl with the suggested fresh leaves of cilantro and sour cream...don't skip the sour cream! It really added a nice touch to the soup. I also topped with some avocado. So delicious! Everyone was a fan at dinner.

Hot Italian Giardiniera

This is the BEST! I eat it for snack sometimes and when I don't have any on hand, I crave it! I cut down on the olive oil. I use a 1:2 ratio for EVOO:vinegar.

Bangers and Mash

This was really good. My boyfriend is half English and he's never seen bangers and mash made this way but he loved it. What brand sausages are you supposed to use? We had no idea and bought Farmer's John brand and they were definitely not the right ones but delicious nonetheless. Next time I will put mushrooms in the gravy as well.

Bacon Roasted Chicken

I like using only four bacon strips as eight seems to make things a little too greasy and I skip adding the beef broth to the pan. But overall this is a great recipe for very MOIST chicken!
