Slow Cooker Enchiladas

So good! I added a can of black beans to the meat and only 1/4 cup water. 2-3 cups of cheese is all it needs.

Strawberry/Rhubarb Crumb Pie

Just like the other reviews, I omitted the egg, cut the sugar to 1/2 cup, and add 1 Tbsp of cornstarch. For the topping, I used just 5 Tbsp of butter. 4 stars as is, but 5 stars with modifications.

I made these exactly as shown, except I doubled the amount of butter and didn't use any shortening, only because I didn't have it. They still turned out excellent!

Manicotti Alla Romana

I made this almost exactly as written. My only two changes were that I used 3 cloves of garlic and italian sausage rather than ground beef. I got the sausage from Whole Foods - they sell bulk sausage in the fresh meat, so you don't have to remove the casings.

Thai Red Chicken Curry

I had high hopes for this recipe and was really disappointed. Especially since it smelled so good while it was cooking. I did what several people recommended by doubling the red curry paste, adding fish sauce, coriander, sugar, and red peppers. I was really surprised at how little flavor it had, especially after everything I added. I can't imagine what it would have tasted like if I didn't do anything different.

Baked French Toast

This recipe is amazing. My favorite bread to use is sourdough that my boyfriend sometimes brings home from San Francisco. It's nice to see that this recipe still tastes good when I make it a little healthier by using fat free milk and fat free half and half. I cut the eggs down to 6 total.

This is an awesome recipe. I sauteed mushrooms in 1/4 cup butter, rather than 1/2 cup. I also cooked peas and threw them into the mixture. Total baking time was about 45 minutes.

Cream of Broccoli Soup I

This soup is awesome! I had some leftover carrots that I chopped up and added with the onion and celery. I also used some fat free half and half that I had left over and skim milk for the rest of the 2 1/2 cups. It turned out amazing.

Creamy Au Gratin Potatoes

This recipe tasted great! I've only made au gratin potatoes from a box and these are much tastier. I used skim milk and low fat cheddar cheese to cut down on the fat.
