Thai Steamed Mussels

Good, but I found that the lime juice was a bit overpowering so I had to add more coconut milk the first time to balance the flavor. The second time I made it, I just cut back the lime juice and it was perfect for me. I use the live mussels sold at Costco (5lbs for $11.99) ! YUM

Filled Cookies II

I added a bit of sugar to the dough to make it more cookie-tasting. I also didn't want to wait for it to chill and it is unworkable otherwise so I just plopped dollops on a cookie sheet and put the jam in wells that I made with a spoon. Very good.

Halibut Weaver

I'm sorry but this just did not work for me. Maybe because I used medium-sharp chedder, but the combination with the halibut did not sit well. The unique flavor of the halibut was ruined. I've tried a similar recipe that used purely parmesan and it was much better.

Feta Cheese and Bacon Stuffed Breasts

Really good! the only changes I made was to marinate the chicken first for a couple of hours as others suggested, then I added a couple of tsp of mayo to the filling to make it "stick" without changing the flavour. Fabulous.

Very good. I don't have a candy thermometer so I made sure I waited until the soft ball stage. Turned out perfectly. I added 1/4 bag of chocolate chips before mixing - YUM

Beef Tenderloin with Ginger-Shiitake Brown Butter

The sauce is excellent, but the steaks are only seasoned with salt and pepper. It would have been nice to have the flavour infused into the meat instead of just in the sauce.

Best Brownies

I had left over Christmas liquor, so I substituted the vanilla in the recipe for Galliano and added a couple of tablespoons of banana liquor in the frosting (it made it more spreadable as well). I also added about 1/4 cup each of butterscotch and chocolate chips and about 3/4 cup of walnuts to the brownie. YUM!
