Poor Man's Caviar

Reviewed: Jan. 1, 2010
I have been looking for a good cowboy caviar recipe and this is it! I used what I had on hand namely kidney beans, navy beans, yellow corn, 1/3 c. dried parsley and 1/2 to 1 t. dried basil. The dressing in this recipe is so much more mellow than the recipes that use harsh bottled Italian dressing.

Great recipe. Lightly coat the blueberries with flour to get them to mix in easily.

Big Soft Ginger Cookies

Reviewed: Nov. 16, 2007
I have made this recipe for years at Christmas. I do not add the water to the dough making easier to handle. For an extra treat I frost them with a lemon frosting. My family loves these. Frosting: 2 c. powdered sugar, 1/2 c. butter, softened, 3 T lemon juice

Peanut Butter Vegetable Chicken Soup

Reviewed: Oct. 17, 2007
Very good. Everyone goes back for seconds and thirds. I added the corn, rice and coriander. I didn't have any zucchini, broccoli, or okra but did have some frozen lima beans! So I used those instead. We sprinkled golden raisins on top.

Blackberry Peach Pie

Reviewed: Sep. 15, 2007
This is wonderful. I had blueberries to use so I substituted those for the blackberries. I added 1 T. sugar to the spices to sprinkle on top. I also increased the corn starch to 4 T. I made my crust with 3 c. flour, 1 t. salt, 1 c. chilled butter, 6-8 T ice water. Instead of trimming the edges I folded the bottom dough over the top dough and crimped together. It took longer to bake than what is directed.

Cheesy Pasta Salad

Reviewed: Apr. 7, 2007
I was looking for a pasta chicken salad with grapes recipe and stumbled upon this. It has a blend of wonderful flavors. I added more grapes as there weren't enough plus too dry for my family's taste so I added more mayo.
