Classic Macaroni Salad

Delicious! I omitted the sugar completely as I don't like sweetness in my mac salad at all. Might have used a little less onion. I used two very small onions instead of one large, and it seems very very oniony! Overall, excellent recipe. Just like my Mom used to make!

Oatmeal Cocoa Macaroons

These were great! I read the previous reviews and substituted butter for the shortening. Apparently I did not read enough of the reviews to learn that boiling longer would produce dry cookies - I boiled about 3 minutes and they are a little bit dry. So - BIG POINTER for the next person who makes them - only boil them for 1 minute as previous reviewers have recommended! :)

Chocolate Cream Pie II

Absolutely DELICIOUS!! This was my first ever chocolate pie and it was a huge success! I used a store bought crust, added 4 tbsp. of cornstarch instead of 3, continued to cook the filling for about 3 minutes after boiling, and stuck it in the freezer to help it set a little quicker. Took about 2 hours to set. I had a family member request a chocolate cream pie (and she's going to pay me) - I am very confident in making this one for her! Thanks for a fabulous recipe! Edited: I tried this recipe a second time and tripled it.... turned out excellent!

Cherry Cheesecake Dessert

My first ever baked cheesecake. I was actually paid for this so I was REALLY hoping it'd turn out perfectly - and it did! I obviously haven't tasted it but it looks awesome! I would recommend doubling or tripling the filling for a thicker cake. Even doubled, this recipe only half-filled my 10" springform pan. I'll probably x4 it next time I use this pan!

Chocolate Chocolate Chip Cookies I

I realized half way through making these that I didn't have any cocoa powder. I left it out and they still turned out like perfect chocolate chip cookies. I'm impressed!

Whipped Shortbread Cookies

Mine turned out GREAT! I think the key is making sure they are mixed for at least 10 minutes. I used my KitchenAid mixer and let them mix on medium for about 12 minutes (I also whipped the butter by itself first for about 2 minutes) and they were PERFECT! I took them to work and got tons of compliments on them. Thanks!

Pumpkin Spice Muffins

I have to say, for these being so healthy and so low cal - they are quiet good. Some people complained that the nutmeg was too much. I didn't use any nutmeg in mine at all (didn't have any) and instead just upped the cinnamon to 2 1/2 tsp. I also used 1/2 cup of Splenda instead of 1/4 cup of sugar. Mine came out great! I can see why people who aren't used to eating whole wheat flour or healthy baked goods would not like them. But for a dieter, these are by far one of the best healthy muffins I've made! :)

Crispy Almond Cookies

I did not refridgerate the dough either, and instead rolled it into 1 tsp. balls which I then rolled in a mixture of ground almonds and sugar. I don't know if it's because my oven is new, but the cookies BURNT on the bottom. Maybe 375 is too high? Then again my oven might just be too hot (this was only the 3rd time I've used it since new!) Overall, excellent taste! I would probably bake them at 350 next time though.
