Slow Cooker Chicken and Noodles

I quartered new potatoes and placed those in first, then added my chicken pieces(seasoned with garlic salt and fresh cracked pepper) added carrots and celery then poured in 4c water with chicken bouillon and 2 bay leaves. Toward the end I added leftover roasted red bell peppers, mushrooms, and onions. I had regular egg noodles and boiled them separately. I tried thickening it with the cornstarch but that didn't work. I even tried instant mashed potatoes. In the end I made a roux with butter, flour, and some of the liquid from the slow cooker on the stove. That did the trick. I think cooking the noodles separately will result in a thinner broth. I will make this again. I would like to try adding a little sour cream at the end next time.

Groovy Green Smoothie

Yum! I used vanilla Greek yogurt. I didn't have any grapes so I used the entire peeled, cored, and chopped apple as another reviewer suggested. I tried this with kale and it was very good. First time making a smoothie. Will make again.

Easy and Quick Strawberry Summer Salad

Great base recipe. I spiralized and marinated my cucumbers in the dressing with fresh chopped mint. Started with field greens, then topped with the cucumbers, sprinkled the sliced strawberries and garnished with feta cheese. I think my addition of mint and feta took this over the top.

Summer Potato Salad

I added lemon zest, radishes, sour cream,and fresh dill. Left out the oil and Worcestershire. I thought the Worcestershire might be why some said theirs was grey. Made this the night before. Best potato salad I've ever had. Served with Dr. Pepper slow cooker pulled pork sandwiches and a salad of field greens with marinated spiralized cucumbers sliced strawberries, red onions, feta and mint.

Mom's Breakfast Strata

I used leftover croissants and hot dog buns. leftover cooked bacon instead of ham and spinach instead of peppers. I seasoned with garlic salt, cayenne, and fresh cracked pepper. I didn't make this ahead of time but I did have to bake longer. Not sure if that had something to do with the bake time. If you have extra croissants. Use them for this. They added amazing flavor! Next time Id like to use spicy sausage and make the night before as the recipe instructs. Still turned out well, though.

Tater Tot Taco Casserole

Yum! Perfect use for random frozen leftover French fries and taters tots. I used a combo of both and a mixture of leftover cheese. I topped mine with shredded lettuce, sour cream, and green onions. Black olives would be a nice garnish as well.

Swiss Chicken Casserole I

I greased the dish, placed 3 boneless skinless chicken breasts cut in half sprinkled with seasoned pepper, sprinkled thawed frozen green beans and corn on top, sprinkled with shredded cheddar and Swiss, spread a can of cream of mushroom mixed with half white wine and milk, topped with dry stuffing mixed with the melted butter and baked for 35 mins covered. When I took it out to uncover and bake another 15 mins I noticed the stuffing was crunchy looking so I took a spatula and pressed the stuffing mixture down to let the soup mixture seep up and moisten it. Covered and baked another 10 mins and uncovered and baked 15 mins. This was SO easy, inexpensive, and very little cleanup. Served with instant mashed potatoes for a throw together weeknight meal. I will try this in the slow cooker during the summer when I don't want to heat up the kitchen. I am pleasantly surprised by this dish, I wasn't expecting to like it at all.

Pizza Buns

Quick, cheap, easy. I actually used leftover ham and rolls from Easter for this instead of ground beef. Some of them I added leftover grilled veggies. Those were good too. I used my toaster oven and that worked great. I will definitely make these again during the summer when its too hot to turn the oven on. Next time I may try spreading garlic butter on the buns before the initial toasting for a little more flavor.

Refreshing Watermelon Salad

This was fantastic. I didn't have any lime and it was still very good. Ive made another version with dried mint instead of cilantro. Both are good. I added some crushed red pepper. Next time try cantaloupe or honeydew if they are less expensive? Next time add lime zest with the lime juice. The quality of feta could really take this over the top. I used a very nice feta from a specialty market. Served with baked buffalo chicken thighs and roasted veggies.

Mexican White Rice

This was very good. I didn't have the poblano pepper so I subbed with a little crushed red pepper. Served with ground beef enchiladas II. I would make this again but with the poblano pepper. The milk Wss a nice touch.

Stroganoff Soup

I was in the mood for a thinner cream soup so I made with only 1 can cream of mushroom soup and used only about 1/4 c sour cream. I also only had 1/2 lb ground beef so I threw in some chopped broccoli, cauliflower, carrots, and celery to supplement. I browned the ground beef and veggies with garlic and some cayenne, then drained. Then added 3 cups beef broth instead of water and a splash of red wine. Brought to a boil, then reduce heat and simmered about 10 mins. I used an immersion blender to get the big chunks of veggies smaller. Then added cream of mushroom soup, heated through. Then removed from heat and added sour cream so it wouldn't curdle. Finally, added cooked egg noodles. I would make this again but definitely add fresh mushrooms. This was a good base recipe for me to adjust to my own taste and what I had on hand. I wanted a cream soup but had no milk on hand. The canned soup and sour cream did the trick. I also think fresh parsley would be a great addition. Yummy lunch to make on a day off!

Cheese and Olive Bread

This was fabulous. I'm not a huge fan of olives but I wanted to try this because it looked different. I didn't have the onion powder so I left it out. Served with Bolognese over angel hair. Will definitely make again.

Mom's Peach Crisp

This was good. I used thawed frozen sliced peaches and I added cinnamon and cornstarch to the peaches as suggested by reviewers. I only used about 1/3 c brown sugar and it was still very sweet. Next time try 1/4 c brown sugar.

Mini Ham And Cheese Rolls

Very good. I've made these a few times now. Turkey works well too if you want a variety. The first time with the butter mixture on the top of bun. Too greasy to hold onto. This last time I buttered the inside only and that worked better but I only did one side of the bun. Next time: try butter mixture on both insides of the buns. Made with 7 layer salad for a nice make ahead dinner. 6 of these are good for the 2 of us with a hearty side for dinner.

Seven Layer Salad

Great! I used half mayo and sour cream and added a splash of cider vinegar to the dressing. I subbed garbanzos for the peas and hard boiled egg for the cauliflower. I really liked the parm cheese in the dressing. I sprinkled salt and pepper in the salad layers. Next time I will add salt and pepper to dressing as well. Served with mini ham and cheese rolls.

Creamy German Coleslaw

SO easy! I added a shredded carrot for color. Didn't measure any ingredients. I made the dressing in a large Pyrex dish that has a cover. Then I added the cabbage and carrot and just put the lid on and shook it all up. Served it right in the glass Pyrex dish. red bell pepper or purple cabbage would be great too for more color. Served with BBQ chicken and lemon roasted veggies and potatoes.

Grilled Stuffed Chicken Thighs

My boyfriend made this exactly as written in the oven. I made sugar snap peas with corn and curry rice for sides. Delicious! This chicken would go with almost anything.
