My cooking tragedies
A tragedy that turned into a triumph: The first time I made cream cheese icing, I was a complete rookie. I used 1 pkg cream cheese, 1 cup margarine, and 3 cups GRANULATED sugar. Oh it was terrible. I tried eating it and it was like choking down sickly-sweet, beige beach mud. For a while, the bowl of gunk sat at the bottom of my fridge as an awful reminder of how much money I'd wasted. But then, inspiration hit! I did an Ingredients Search and found a fantastic recipe for cream cheese pound cake that used exactly the amount of cream cheese and sugar that I already had, and it ended up being the best thing I'd made all month.

Spaghetti Squash I
Spaghetti squash on its own is pretty bland no matter what veggies you add. I added some pasta sauce and that helped quite a bit.

Eggplant Parmesan II
I didn't bother with the salt and the draining recommended by other reviewers, and it was absolutely delicious anyway, no bitterness at all. I used huge black eggplants (as opposed to skinny Chinese eggplants), and the breaded slices were so big that I used a few of them, sliced thicker, for burgers the next day. Amazing. Baked eggplant is my new favourite thing.

Big Soft Ginger Cookies
I used spiced rum instead of water, and made sure to really squash them down (following OSHUN's advice) instead of leaving them as balls, and they came out beautifully!
