Enchiladas Suizas

I make these all the time, and I'm finally reviewing them! These are the best enchiladas, they are the only enchiladas I make. I've made them for guests, and they get rave reviews. One thing I do change slightly is I increase the amounts of the sauce just slightly. The amount of sauce the recipe calls for just does it. I prefer slightly more. Also a can of chicken broth is 2 cups, so it's convienient. Also I make 10 every time, I can't seem to get 12 from the amounts of everything else. Oh, and I add more cheese than whats called for. Overall this is a really awesome recipe!

Sour Cream, Cucumber and Dill Dip

This dip is excellent. I needed a dip for a crudite platter I made, and I thought about buying a dip, then I found this recipe and thought I'd try it. I'm so glad I did because people RAVED about it. People said, "it tastes so fresh". It's so light, it's perfect for the warm weather. I'll definately make this again. Oh, I didn't add nearly that much lemon juice, I added just a squeeze.

Bread Machine Cardamom Bread

I'm giving this recipe 4 stars as it is. With these changes I'd say it's 5 stars. I've made this bread 5 times now. It does need more cardamom, 1 tsp works well. I also use less flour, about 2 3/4 cup. And I use 1 tsp of salt. I learned that the hard way. The first few times I made it it would fall in the middle, then I researched bread making and I learned that the salt keeps it from falling in the middle. Now I love making this bread and giving it as gifts, it's really delicious.

Chewy Coconut Cookies

These are my husbands favorite cookie. I add more coconut, maybe 1/2 cup more, and I add macadamia nuts. They're delicious!

Chocolate Zucchini Bread I

This bread is really good. I made a few changes, because I know what I like in a quick bread. I like it to be really moist and I find that the recipes with sour cream in them are best acomplished in this way, so I added 1 cup sour cream. I was also concerned with it not being chocolatey enough, so I added a few tablespoons of cocoa to the dry ingredients. I also added extra chocolate chips. I also did what other reviewers suggest, and add the choc chips to the dry ingredients so they don't sink and it worked well. I added a little more zucchini also. And seriously, this is the absolute best bread I've put zucchini into ever! And I've been making different zucchini bread recipes all week. (I have a ton of zucchini in my garden). With the changes I made, I would consider it about perfect! I'll make it again and again. You would never know it had zucchini in it. It's perfectly moist and delicious. Like a rich chocolate cake. Just wonderful!

Creamy Rice Pudding

This is really good and creamy. I've made it a few times and like other reviewers have stated, the 20 minutes in the first cooking stage to cook the rice isn't enough. When I did that the first time it was a little crunchy. Now I cook it for 30 minutes and add just a touch more water, and now it's great. Also when you add the egg, mix it with the milk (when you add the milk at the end) and that will prevent the egg from making scrambled eggs. Sometimes I use half milk and 1/2 half and half or cream to make it even creamier. It's delicious and easy and I usually always have the ingredients, so it makes for a nice treat once in a while!

Slow-Cooker Chicken Tortilla Soup

I think this recipe is 5 stars when you make modifications.. don't add water! I didn't even add more chicken broth based on others reviews on how it is watery. So the only liquid I added was the one can of chicken broth and the liquid from the canned tomatoes. That's it. It was thick and delicious. It turned out very flavorful, and tasty! Also I added a can of black beans, rinsed and drained. The homeade tortilla strips are a nice touch, and they are also delicious! My husband said they were the best tortilla strips he's ever tasted. (I guess he'd never had them homeade.)

Sweet Corn Cakes

This is so delicious! It is exactly like the sweet corn cake the mexican chain restarants, like El Torito, serve. Usually I buy the mix at the store and make that, but this is so much better. I served it with enchiladas and rice and beans, and it was a big hit. For the masa harina, I read the other reviewer state that what this is, is corn flour. So instead of going out and buying this ingredient, I took cornmeal and ground it up to a flour like texture in the food processor. And it worked perfect. I highly reccomend this recipe. I think the reviewer that stated it was too buttery, and too gooey, expected it to be corn pudding, or something else. This is not that. If it is what you are expecting, the sweet corn cake like served in popular mexican restarants, you won't be disapointed. I will make this every time I make mexican food! Thanks!

Banana Sour Cream Bread

this banana bread is my favorite! I've made it 3 times now. I usually halve it and it's still really great. I don't do the cinnamon and sugar as the crust, because it doesn't sound good to me. Like others reccomend, I use half brown sugar and half white, and I usually add a few more bananas. This is moist and very flavorful! I very much reccomend it!

Yummy Yam Casserole

This recipe is excellent! I enjoyed it very much. I think I'll make this recipe every Thanksgiving! The butter and brown sugar on the top with the nuts really is a nice touch, and very tasty!

Meatloaf California

This recipe is excellent! My husband said it was the best meatloaf he's ever had, and couldn't stop eating it! I agree. It is very tasty and moist. And I love the sauce that goes over it. Some things I did different, like another reviewer suggested, I reduced the brown sugar to 2 TBS. perfect. not too sweet at all. Just really flavorful and delicious. Also, another reviewer stated there were too much dried spices involved, and pepper, these I just "eyeballed" to see how much looked right. And it turned out perfect! Just enough spice and herbs so they added flavor but not overpowering. Overall I love this recipe and so glad I found it! Thanks!

Pumpkin Cake I

This is very good. I used 1/2 cup oil and 1/2 cup applesauce. I added more spice to it. I will definately make again, delicious and very very moist!

Pumpkin Bars III

This is a good recipe, but like other reviewers suggest, it is a cake, not a bar. The cooking time is incorrect also, it takes much longer than the time stated. I cooked mine for about 55 minutes and it turned out to be a really light fluffy cake. Also in addition to the 2 tsp cinnamon I added about 1/4 tsp cloves, some nutmeg, allspice, and ginger. The taste was great. Overall, we enjoyed it, it is tasty, just not a bar.
