About this Cook
I am stay at home mom with two beautiful little girls, so despite having gone to cooking school, I don't get to cook much gourmet food any more. That's okay, because even foodies can enjoy simple home cooking.
My cooking tragedies
The first time I tried to brine chicken breasts I forgot about them and left them in the fridge for more than a day. When I finally cooked them they were sooooo salty and totally inedible. My husband called the dish "The Dead Sea Chicken."

Jiffy Casserole
This is a very good, simple and hearty dish. I too found that thinly slicing the potatoes worked well, as well as adding the onions to the meat is order to make cooking go a little more quickly. I used two large baking potatoes, and that was plenty of potato for us. I would recommend adding a little garlic to the beef while it's browning as well. The veggies I put in were shredded carrot and zucchini, but I think I'll try the green bean suggestion the next time I make it-- and there will definitely be a next time.

Cranberry Pork Chops II
Quite tasty. Use thin chops though. I also didn't have fresh or frozen berries, so I used the canned whole berry cranberry sauce and omitted the sugar. I would recommend putting in half a large onion, it adds a little oompf. As a twist, substitute some frozen or canned tart cherries and some herbes de provence(and a little cornstarch to thicken it at the end)

No Bake Cereal Cookies
I enjoy making (and eating) this very easy and delicious recipe. I top them with melted milk chocolate chips (12 oz or so-- microvave on high for 2 minutes or so, stirring every 30 seconds). I really like the fact that they take a mere 15 minutes or so to make, and people really like them. Perfect for potlucks and bake sales.
