Janet's Rich Banana Bread

I've tried this recipe several times now and it has come out great each time. The only changes I made were 1)to use room temp margarine (because I'm lazy and cheap), 2)to mash the bananas, and 3) replace the flour with gluten free flour mix. This recipe is a keeper for me. Thank you!

Cranberry Upside-Down Coffee Cake

This cake was delicious! The only change made was to use gluten free flour mix. I especially love the cake batter, itself! So good! It rose evenly and was fluffy and moist. I will definitely use this recipe again! Thank gosh everyone is scared to eat my gluten free creations ... more for me :)

A-Number-1 Banana Cake

I know I'm not supposed to rate something if I've adapted the recipe, but I really needed to share! I love this recipe! Don't care if it is cake, muffin, or bread it's delicious! Lots of banana flavour! The only changes were cutting out the brown sugar and reducing the white sugar to 3/4 c. Still sweet and yummy! I also forgot the walnuts, but I didn't miss them too much. I want to try pecans next time though. Oh and this was a gluten free flour mix ... not too dense at all!

Heavenly Angel Food Cake

This is a very good cake and easy to make. You can substitute the wheat flour for a gluten-free mix. Just make sure that the size of the bowl you beat the egg whites in is very large, mine almost overflowed. But, as a testament to how easy this cake is, I was able to transfer the egg whites to another bowl and it all turned out well! The only thing I need to figure out is what to use all the egg yolks for! lol!

Banana Pancakes I

These pancakes were so easy to put together and they smelled fantastic cooking this morning. I topped them with fresh banana and some maple syrup. I replaced the oil with applesauce. I didn't notice any mushiness. It was missing a little sweetness in the batter for me, so next time I might indulge my sweet tooth and add a little more sugar. Overall, it was a great way to start the morning! Thank you for the recipe!

Easy Roasted Pork

I made this for my mom and sister last night and we really liked it! I'm not sure what an oven bag is so I made it in a corningware with tin foil covering it. I'm very bad for adjusting recipes, so I used 1/2c brown sugar (I might cut it down to 1/3c as it was pretty sweet), one snack container of unsweetened applesauce, and 1 1/2t fresh ginger. I think the fresh ginger that made it! Like another reviewer, I did miss the crust, so I may try rubbing the ginger and sugar on first and browning it in the oven, slightly, before adding the applesauce. Sour Cream Pound Cake

This was my first non-chocolate gluten-free cake to work out! I'm not sure how it tasks as a pound cake since it's been a while since I've tasted it, but I thought and was told (by non-gluten free people) that it was really good. I made the suggested changes for doubling the recipe: 1/4 tsp salt, vanillla, a little extra sour cream, and a little less sugar (to tell the truth, I actually ran out of sugar). Doubled, this recipe made a full tube pan. I baked it at 350 F for about 75 min. I topped it with a premade pecan-coconut icing - which I don't recommend. Maybe I'll make some brown sugar sauce next time! Thank you for the recipe! I'm sure I'll be making this often!

Butternut Squash Soup II

Black Bean Brownies

These were yummy! Not the greatest brownie I've ever had, but good and not too crazy of a sugar rush. My changes were 1/3C cocoa, walnuts, and 1T baking powder. I will be making these again! Give them a shot, its a pretty inexpensive and easy recipe.*I also tried this recipe in a mini-muffin tin (28 muffins), baking them at 350 for approx. 20 min. They turned out great! Gluten free 2-bite brownies!

Apple Crisp II

This apple crisp is SOOO good! I used mostly granny smith's with a few ida reds. Here are my changes: added about 1/2c dried cranberries to the apples (LOVE cranberries!), changed 1c white sugar in apples to 1/2c brown (too lazy to dig out the white), added 1/2c pecans to the crumb. I found it was a little runny, too, so next time I think I'll half the water. My dad's apple crisp better watch its back!

Boiled Bagels

I used a gluten free flour blend and sprinkled poppy seeds on top before I baked them. I followed others advice and made larger bagels, so I ended up with six bagels. I have had no luck with yeast doughs before today, but these turned out great! I don't have to pay $6 for 6 tiny bagels anymore! Thank you for this recipe!

Delightful Apple Spice Muffins

I followed the recipe almost exactly and they really surprised me. They were moist, easy, fast, very yummy and low cal. to boot. My only changes were using 1 1/2 tsp cinnamon, since I had no allspice, and I added some walnut pieces. Thanks for the great recipe!

Peach Muffins

These turned out really well for me. My changes: 1 cup of brown sugar for 2 cups of white, 3 cups of peaches instead of 2 cups, 1 cup apple sauce and 1/4 cup oil for instead of 1 1/4 cup oil, added some dried cranberries. My sister called me the muffin queen!

Sam's Famous Carrot Cake

I have never had carrot cake before, but I thought that this was delicious! I did have one problem...it seemed to separate on me. I don't blame the recipe because I have to use gluten free flour mix and I've never made it before. If anyone could help me with some ideas, I'd appreciate it! I really liked this cake!

Banana Muffins II

These muffins were great! I replaced the butter with 1/3 cup of pumkin because I love pumpkin :) I also added 1 tsp vanilla and 1/2 tsp cinnamon like was suggested in other reviews. Thanks for the recipe!

I love this bread! It's so fast and easy to make and so yummy. I've made it three times in the last two weeks and I never get more than a small piece because my mom and sister devour it as soon as it comes out of the oven!

Country Pumpkin Muffins

I am THE worst baker in the world and I didn't manage to mess these up at all! In fact, I think they are the best muffins that I have ever had. I have Celiac Disease and must use gluten free flour, which, generally, makes baked goods dense and dry. These muffins turned out light and moist. If eating healthier tasted this good, I'd do it more often!
