Authentic Mexican Corn Bread

I have been craving corn bread with whole corn in it for a while now, so I decided to give this a go. It did not disappoint! I took the suggestion of some other users and went with 2 cans cream corn and 1 can regular, and it turned out super moist and rich. It is a bit eggy, but I really like the almost custardy note of the eggs (I can see how that might be offputting to some, though). This is totally going to be my new go to corn bread recipe!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

This recipe was okay, but as many others have said, it was far too sweet. I also found the consistency to be a bit more moist than I am used to. I used this recipe because I lost track of the one I usually use, but I think I will need to search harder for it. This will do in a pinch, but it's just too cloying without some serious changes.

Lemon Sponge Pie I

This pie is really delicious - light and fluffy with a great, tangy lemon flavor. I followed the advice of some others and prebaked my crust for 10 minutes before adding the filling, and it turned out perfectly. I also topped mine with sugared strawberries and it was a lovely sweet compliment to the lemon flavor. I will definitely be making this again!

Creamy Rice Pudding

This is the easiest rice pudding recipe I've tried, and it turns out great every time! We always have rice going in our rice cooker, and this is a great with a fresh batch or as a way to use up the last of a batch that is about to turn hard.

Fudgy Chocolate Cream Pie

I've been craving chocolate cream pie something fierce this week, so I decided to give this recipe a go. It was super easy to make, and it turned out great! It's still cooling in the fridge right now, but I got impatient and had a slice already, and even slightly warm, it set up beautifully and tasted really rich and chocolatey. I did take the suggestion to add 2 tsp of corn starch and another 1/2 cup milk, because my pie dish is very deep, and that seems to be a good amount of filling - enough to make a good balance with a whipped cream topping. I also used the suggestion of spraying and wiping down my plastic wrap before covering the pie, and it made it much easier to peel away. I will definitely be making this again next time I need to bring a dessert for something!

Cheese Blintzes

We used to have these all the time when I was a kid, and today I got a sudden craving for them. This recipe is pretty much a perfect replication of what I had as a kid, and so easy! They are traditional "blintzes", but they are a really nice, mild, crispy treat!

Updated Mulled Cider

This was really delicious! I decided to follow some other people's advice and use the whole orange slices with cloves punched in (around 30), as well as an extra cinnamon stick. Also, since I didn't have a non-reactive pot on hand, I put it in my slow cooker from the start. I put everything in and heated it on high for an hour, then on low for the rest of the evening, and it was absolutely delicious. After that I poured the whole mixture (oranges, raisins and all) into a pitcher to store in the fridge and it got better and better the longer it all sat together. I just made this a few days ago, and already I'm making another batch!

French Breakfast Muffins

These were absolutely delicious. I was worried because the batter was very thick, but after triple checking to make sure I hadn't done something wrong, I decided just to go with it, and they came out perfect - extremely moist, and just sweet enough to satisfy. I wasn't expecting this to become a go to recipe, but these were a big surprise!

Easy Caramel Custard

The taste of this was okay, but having followed the instructions to the t, the caramel didn't turn out (it basically just turned into a brick of white sugar). So I started it over and used 3 TBSP of water and managed to get a syrup. The custard also had to cook for an extra 30 minutes to even begin to set up. In the end the taste was only average, and definitely not worth all the extra time.

Quick Yeast Rolls

These were so delicious. I used butter instead of shortening and added about a tablespoon more flour to the dough, as well as sprinkling another table spoon over it before I formed the individual rolls, and it was incredibly easy to work with. The dough was quick to make, and the rolls were soft and delicious. We used them as buns for crabcake sandwiches, and then everyone ended up going back for seconds on the bread. This will definitely be my new go-to roll recipe.

Chocolate Chip Muffins

These were average, but nothing to write home about. I did follow the advice of some other reviews to add a bit more milk and oil to moisten them up, and the texture turned out lovely, but the taste is fairly bland. Also, I can taste the baking powder in them, even after they are cooked. I think maybe I would have benefited from adding a bit of vanilla or something, just to brighten up the flavor. If I make these again, it will definitely be with some more heavy-handed adjustments. Still, they aren't terrible. They'll get eaten.

Grandma's Old Fashioned Tea Cakes

My first batch of these, baked for 13 minutes and cooled on the pan for 5 were still a little undercooked. I had followed the advice on rolling them out without extra flour, and I think they were a little too wet. My second batch, I forgot were in the oven and ended up cooking for about 25 minutes. I just took them off the pan immediately and they were perfect. Whatever the case with the baking time, though, the result is quite tasty, with a delicate sweet flavor, and a nice soft and slightly chewy texture.

Pumpkin Gingerbread

I made this in the hopes that it would be more like a pumpkin bread than a gingerbread, and I was not disappointed. This is very moist and dense, just as I always feel a pumpkin bread should be, and it has a great flavor. I may have used slightly more pumpkin that needed (I only made one loaf, since I was low on sugar, and I eyeballed half the can of pumpkin), but either way, it tastes great, and has just the texture I was looking for. :)

There were really good - big and slightly chewy, with just the right amount of sweetness. I had to bake them a little longer than the directions said, but over all, a solid recipe. :)

I used this as a cupcake topping, and it turned out great. I didn't wait for it to cool, so it was fairly drippy, but it looked really gorgeous, and tasted absolutely wonderful, so I didn't mind the extra drips on the serving plate. :)

Sweet Vanilla Cherry Cake

Aside from making this in a slightly smaller pan, I followed the recipe exactly, and it turned out okay for me. My family really loved it, but to me it tasted quite eggy (though the texture was correct). I will probably make it again, as it was pretty easy, and my family did enjoy it, but it's certainly not my favorite.

Basic Crepes

This is super quick and easy. I added a teaspoon of vanilla with my milk and water, but other than that, I followed the instructions exactly and they came out great. I served them filled with honey, strawberry cream cheese, and a cinnamon sugar mixture. So tasty!

Strawberry Muffins

This was a really tasty, mildly sweet treat! I made some changes based off other reviews. I added in 1/2 tsp of vanilla and cinnamon, as well as cutting out 1/4 cup of flour, and adding an extra 1/3 cup of strawberries. It turned out very moist and delicious. I was baking at someone else's house and didn't have a muffin tin, so I followed the idea of using a bread pan, and it worked out quite well.

Mom's Buttermilk Pancakes

I always manage to somehow bungle my pancakes (I know, that is a very weird Achilles heel), but this recipe is so easy and they turned out really delicious and fluffy. The only change I made was only using 1/4 teaspoon of salt. Also, I added fresh strawberries just before flipping on half the batch and it was just as delicious as the plain ones.
