Chuck's Favorite Mac and Cheese

For some reason, I was a bit paranoid to make this because it had cottage cheese in it! But according to friends, they thought it was one of the best they've ever had. I didn't put any sour cream in it, but I put some splashes of 1% milk. The cheeses I used were shredded Sharp Cheddar... and a shredded 3 Cheese blend. I also used Italian-seasoned bread crumbs (without the butter, like other reviewers suggested) and garlic powder. This is best served with some tomato soup! :)

Grandma's Gingersnaps

Pumpkin Chocolate Chip Cookies III

These pumpkin chocolate chip cookies weren't as fabulous as other cookies I've had. Good, but didn't stand out as much! I'm hoping they're better the next day like most cookies are. :)

Pumpkin Gingerbread

Great flavor! This dessert-y bread was the first thing gone from the table at a Christmas party I attended! :) I replaced all the oil with unsweetened applesauce (for healthy reasons!) and cut the amount of cloves in half since I'm not a fan of the flavor (very strong otherwise). I did double most of the other spices like other reviewers had suggested. After it cooled, I melted cream cheese frosting and drizzled it all over. Amazingly moist and yummy! :) Thanks for my new holiday favorite!

Really Creamy Fettuccine Alfredo

I cut the recipe size down to two. After that, I cut down some of the butter/margarine for lower fat content. I also cooked in the nutmeg instead of sprinkling it on top at the end. Really good taste, but unfortunately, it came out really thick and clumpy, so the presentation is a bit off! Glad it didn't contain heavy cream! :)

Empanadas

I made these for a Cinco de Mayo party and called them "American Empanadas" since I filled them with apple pie filling. I took some other reviewers' advice and coated them with egg for a more shiny brown look. It didn't really come out looking like the pictures (actually looked very far off from the listed photos), but they were gobbled up. This recipe didn't yield 2 1/2 dozen for me (hence why I wasn't able to try one myself; I wanted to make sure everyone else could try them!). So if you're wanting to make quite a bit, double the recipe!

Oven Pot Roast

I got the thumbs up from the friends about the pot roast! I couldn't give it a 5 because I changed some stuff in it... but it's definitely 5-star quality. I used onion gravy mix instead of onion soup since that's all I had. I had no vermouth, so I used the equal amount of water. I also rubbed some powdered garlic into the meat before flouring it. I also didn't cut off the fat before cooking since it added a bit of flavor (but definitely didn't serve it). I put carrots and potatoes in with the roast 2 hours after it was already in the oven. I let it cook for a total of 5 hours (give it take 20 minutes) at 275 degrees. Very tender and pulled apart nicely!

Award Winning Soft Chocolate Chip Cookies

Very chewy and delicious. The batter is VERY thick; that's normal! I cut the recipe in half (36 servings) and didn't use as much butter (1/2 cup and 2 tablespoons) to cut down on the fat. This recipe is going to replace my regular one! My taste testers (i.e. friends) loved them. They're definitely better the next day (it allows the flavors to settle). Yum! EDIT- I tried Butterscotch pudding, and my friends said it tasted better than the vanilla. I love both! ANOTHER EDIT- I tried banana cream pudding and it didn't taste as good as butterscotch. The "fake" banana taste didn't mix as well with the choc. chips. It was good, just probably won't make it again.

Quick and Easy Chicken Noodle Soup

GREAT! I was so relieved. The last soup I made turned out rather bland and disgusting... but this one is really yummy. My best gal pal even said it was the best chicken noodle she's ever had. I didn't use 4-14.5 oz. cans of chicken broth; I just bought the largest can of chicken broth available (46 oz.). Helped keep down the saltiness, I think! Perfect ratio of all ingredients. :)

Great chewy cookie recipe! My aunt loves 'em. I only used 1/2 cup of stick butter (by accident initially), but they still tasted fantastic (and healthier, too!).

Eclair Cake

AMAZING! This is one of my favorites because it's so delicious and easy to make. The trick is really to get the graham crackers soggy (the longer time in the fridge, the better). I always use dark chocolate frosting for more of an eclair-y taste. A real tummy pleaser!

Blueberry Pie

It turned out rather yummy! I didn't have cornstarch so I used 8 tablespoons of flour (double the 4 tablespoons of cornstarch). I also used store-bought pie crust to make it easier/quicker as well.

Applesauce

I did everything the same except that I didn't peel the apples since I like the pinkish color for homemade applesauce. :) It was pretty good, but it wasn't gobbled up right away. Easy to make!

Cinnamon Coffee Cake II

To make it more healthy, I used applesauce instead of oil (comes out more moist!). I didn't put any nuts in it since I'm not a fan of them (and too many nut allergies among my friends). I get requests for this every brunch I go to! It's even better the next day because the flavors settle in. Mmm!

Best Big, Fat, Chewy Chocolate Chip Cookie

Makes delicious and everyone's favorite chewy, fluffy cookies! Just recently, I found out that humidity plays a huge part in the look of the baked cookie. My last batch came out flat and blah looking despite my having used the same recipe and ingredients (everything was done the exact same way). Give your cookies another try and make sure there isn't a lot of water in the air!

White Chocolate Raspberry Cheesecake

Made it for an Easter party, and it was also my first time baking a cheesecake. - It was demolished by the end of the night! No one could tell it was "healthier" (used low fat cream cheese) Very creamy and dense but not too-too rich. I didn't have frozen raspberries, so I used raspberry preserves. I also used a mix of finely chopped graham crackers and Nilla wafers for the crust. Yum!

Garlic Chicken

Quadrupled this recipe for a service project lunch... and the chicken turned out great. Moist and very yummy. I even had a guy ask for the recipe! :) I used Italian Bread Crumbs instead of regular. Great flavor.
