Stuffed Peppers

Great base recipe, but here's my version. Boiled peppers first for 2 minutes then allow to cool. Brown 1lb turkey w/ 1c chopped onion and 1tsp minced garlic, 1 tsp salt and pepper. I then added the suggested tomato sauce mixture and rice. After stuffing the peppers, the sauce seemed quite thick and didnt leave anything for me to baste with...not a problem. Baked for 45 mins covered then uncovered and topped with sharp cheddar the last 5 mins. They were so frikin good!!

Chicken Marsala

This was very tasty but definitely needed to cut down on the fat content. Used 2 tbsp coconut oil to saute the chicken then when all was done and simmering, added in a 1/2 tbsp butter to cream it up a bit. The coconut oil added great flavor.

Meatball Nirvana

Very good but i omit the additional oregano. Made it once exactly as the recipe stated and it was way too overwhelming. The spice mixture also makes for great turkey burgers.

Southwest Stuffed Chicken

This is stuff is great!! I have made it quite a few times and its always a hit. I try to make it a tad bit healthier by substuting 1/4c wheat germ for the bread crumbs. I also omit the flour and butter and dont have any problems with the coating not sticking.

Leftover Chicken a la King

This came out soooo good!! I had leftover pieces of KFC so I pulled and diced the meat. Then used frozen corn,canned diced potatoes and canned carrots. Also added a touch of nutmeg and sage. I had no problemwith the consistency, maybe due to using canned veges. Served over grands biscuits. Delish!!!!!

Cheesy Ranch Potato Bake

I have made these a couple times completely omitting the butter. I spray the potatoes with olive oil then season. To prevent sticking I use the Reynolds no stick foil. Comes out great each time!

The Best Meatballs

Everyone is right....they're the best! I think its the large amount of cheese that really adds to the flavor. Plus adding the water keeps them from turning into hard golf balls. I've been using panko bread crumbs and it works just as good.

Baked Teriyaki Chicken

The sauce is great!! A little salty but a bit extra water makes that better. I have also used it as a stir fry sauce with chicken and vegetables over rice. Very good!

Sweet and Sour Meatballs II

This was awesome!! My only changes were adding green pepper and frozen meatballs. I personally like the tangyness of the vinegar so i used 1/3 cup based on taste. Will definitly make again!!

Spicy Rapid Roast Chicken

Made it tonight and it was great! Only thing i added was garlic and I did double the amount of spices. My bird was 5lbs and used the cooking time in the recipe and it was great! So juicy! I also cooked it upside down on a rack.
