Spanakopita II

SO GOOD! This actually tasted better than the spanakopita I get in our local restaurant. The filling is SO delicious, but I HATE working with phyllo dough (not a fault of the recipe). I may try this recipe with puff pastry, or even the phyllo dough little shells. But the filling is DEFINITELY a keeper. (Oh yeah, I did NOT use the dill, because I didn't think it fit.)

Fruit and Vegetable Pork

This is surprizingly very, very good! I was skeptical at first, but like trying new things. And I'm glad I did! I will say that you should definitely let it cook for the recommended 15-20 minutes so that the flavors can cook together. I tasted it early on, and it wasn't very good. I followed the recipe almost exactly. The only changes I made were: I used less brown sugar, just because I didn't have enough; I didn't use corn starch, because I didn't think it needed it; I used an entire onion; I used the whole can of sauerkraut. If you like sauerkraut, I would recommend this recipe!

Buttermilk Oatmeal Muffins

My mom actually has been making these muffins for years with the exact same recipe. It is one of my favorite foods ever! I highly recommend these muffins for a special (or everyday) breakfast, or just to have around for snacking! mmmmm!

Cucumber Sunomono

Love it! A perfect cucumber salad! I used agave nectar and used much less than 4t, so it wouldn't be too sweet. I also added 2 shredded carrots and probably had more ginger than the recipe called for (I love ginger). I also added some black pepper. It is very refreshing and I can't wait to take it to a summer potluck!

Broccoli and Cauliflower Casserole

This was very, very good! I made it for a potluck and it got great reviews. The leftovers were just as good!! I did add some dried herbs, as some other reviewers suggested. Next time I think I'll leave off the cracker crumbs.

Quick Artichoke Pasta Salad

I made this for a baby shower and it got rave reviews! I'm making it again next week for a wedding shower, and I will certainly make it for my own family as well. I think that the only slight changes that I made were to add some toasted pine nuts and a little bit of red wine vinegar. It is so easy, since the dressing is really just the artichoke "juice". It is also very versatile - you could use whatever veggies you wanted and you could add chicken or shrimp to make it more of a main meal for those who eat meat. I definitely recommend this one!

Sophie's Zucchini Bread

I don't do a lot of baking, so I don't have a lot to compare this to...it is a really easy recipe and extremely tasty!! I didn't make any changes - everyone loved it! One thing that I occasionally do when making muffins is substitute half of the oil with applesauce. It doesn't really change the flavor/texture but lightens it up a bit. However, this bread is fabulous as is!

Greek Salad Dip

I personally thought this dip was just fine, but I just got back from a party where it was a HIT! I got SO many compliments on it! At the end there was some left and someone took a fork and just finished it off! It is so easy to make, very inexpensive, and obviously very popular! Like some other reviewers, I just added the dressing until the consistency looked right. I'm sure that the quality of the Caesar Dressing really impacts the quality of the final product. I just used Kraft, but the dressing does have a starring role, so if you are picky about your Caesar Dressing, then be sure to use your favorite kind. I think this would also be really good with tuna or chicken in it as more of a main dish salad for greens or sandwiches.

Spinach and Feta Pita Bake

This was so good and easy! The pesto is such a big part of it that you need to make sure you buy good pesto. I actually couldn't find the sundried tomato pesto so I used regular basil pesto and topped my pizza with sundried tomatoes instead. You can use whatever toppings you want on here. I agree with other reviewers that it is a little light. I used some leftover turkey on one of mine. I also folded it in half so it was more of a sandwich. My husband really liked it too. This is a great meal to have if your family eats at different times. Each person can fix their pita to their liking and pop it into the toaster oven when they are ready!

Light and Fluffy Spinach Quiche

Great recipe! I forgot to buy spinach at the store so I used broccoli instead. It was still fabulous. I followed advice and used an extra egg and also used feta cheese. I served it at book club and it was a hit!

Meatloaf with Fried Onions and Ranch Seasoning

This is some awesome meatloaf! I made the recipe excatly except that I split the meat into 5 "mini-loaves" and cooked them on a baking sheet. This lets the bottom get a little crunchy. MMMM! I thought the flavors really blended together and I couldn't really taste them separately. But it sure was good! Hubby loved it too!

Roasted Garlic Lemon Broccoli

If you have never tried roasted broccoli before, you MUST try it!! It gives broccoli such a wonderful flavor. MMMMMM!! I usually omit the lemon juice in this recipe just because I rarely have it in the house. It is just fine without it.

Spiced Butternut Squash Soup

Delicious!! I have to admit (I know some people hate it when people change the recipe, but whatever) that I changed the recipe some. I had a leftover butternut squash/leek/tofu gratin that I needed to use up. But basically I stuck to the original recipe EXCEPT for using sweet potatoes instead of regular potatoes. It was quite possibly one of the best soups I've ever eaten. The spices are spot on.

Zesty Slow Cooker Chicken Barbecue

Quick and easy - yum! I served it on buns. And froze some, which I later mixed with a can of black beans and served over rice. Definitely use good bbq sauce though - poor quality sauce would kill this recipe.

Mexican Mole Sauce

Threw this in the slow cooker with a pork tenderloin. Added some chicken broth to make enough sauce. The pork was shreddable by the time it was cooked. This was SO GOOD! As in, lick the plate good! I also threw in a can of black beans. Served it over mashed potatoes, although I thought about serving it over baked potatoes. The sauce isn't too Mexican, it just made a very richly flavored sauce for the pork.

Spicy Slow Cooker Black Bean Soup

YUM! This was so good and exactly what I was looking for! I did make some changes, so it would be exactly like the black bean soup that I had in mind. I added garlic cloves, an onion, carrots, and a can of tomatoes. I also decreased the spicy spices just a tad. And I pureed the whole thing with my immersion blender. This one will be made again and again!!

Bourbon Pecan Chicken

WOW! This really is as good as everyone says! I followed many of the reviewers' suggestions, like cutting down on the butter in the sauce (loved the sauce) and using olive oil and butter to fry up the chicken. I also used those chicken breasts that come alredy sliced very thinly. That cut down on the problem of burning the nuts. We really loved this dish!! I served it with roasted asparagus and garlic mashed potatoes.

Addictive Sweet Potato Burritos

Ok, whoever named this recipe is SO not kidding - these are addictive! I followed the recipe pretty much exactly except I followed the advice of another reviewer and added the spices to the onions and garlic. Then I added the beans and water, then the mustard and soy sauce (which I thought was really weird but you can't taste the individual flavors of these ingredients). Oh I can't wait to eat these again!
