Basil Cream Chicken

This is really good! It is quick and easy, too. I wish I'd had enough ingredients to double the sauce though, because I would have liked to have had more of it to go on my pasta. I wouldn't necessarily make any other changes to the recipe, but it does seem to be a pretty basic cream sauce that could be modified to fit your family's taste (different herbs, etc). Oh, I did use half and half (instead of cream) to cut back on the fat a little. The sauce looks so nice - it could easily be dressed up to serve at a nice dinner. The pimentos add a nice touch.

Cha Cha's White Chicken Chili

This is SO good! I have always been a fan of white chili but have never made it. This is fantastic! I made mine in the crock pot, and used the suggestion of pureeing one can of beans. It didn't thicken up like I thought it should (I'm not a very skilled crock pot cook), but when I served it I added a big scoop of sour cream to stir in and then the consistency was just right. I'm definitely making this again!

Chicken Salad with Bacon, Lettuce and Tomato

This was ok. My husband LOVES chicken salad and he said "it was fine". I don't know if I'll make it again or not. Not that it was bad, but it just wasn't all that great either.

Green Bean Cheddar Chicken

This is actually pretty good. I was a little doubtful, but we really liked it. And it was pretty easy. I would really suggest seasoning the chicken before or as you are cooking it. I did this, and I don't think it would have had much flavor beyond the cheese and bacon if I hadn't. Another thing I may try next time is actually cooking it as a casserole. Maybe not even cooking the chicken before, and just cooking it on lower heat for longer. If I do that I may season the cheddar soup with something. Anyway, it was good.

Mom's Zucchini Bread

Yum!! I am a fan of this recipe! It is really easy and good! I used a couple of the recommendations that other cooks had written - used 1/2 oil, 1/2 applesauce, cut down a little on the sugar, and used more zucchini. I shredded 2 zucchini and that was plenty. Next time I make this I will certainly use even less sugar (this time I used a little less than 2 cups), because it is pretty sweet.

Cranberry Chicken I

I should have trusted my instincts on this one, but I thought that so many good reviews...maybe it's a good meal in disguise. I only ate two bites. I ended up eating a cheese sandwich for dinner tonight. I love cranberries, so imagine my disappointment at wasting an entire can of cranberry sauce.

Beef and Noodle Casserole

This is actually surprizingly good! It is a lot like Hamburger Helper but it is homemade, and just as easy! I used more noodles than the recipe called for, did not add the sherry (I forgot), added more seasonings, and did not bake. It turned out very well. A good, quick, and easy meal that will please kids and adults alike!

Pumpkin Turkey Chili

This is a good, hearty chili! I was a little nervous about the pumpkin but it gets all mixed in and adds really nice texture and nutrients without changing the taste. I did add more tomatoes and some beans, but didn't need to add any chicken broth, like some reviewers. I augmented the seasonings a little bit, adding more chili powder, cumin, garlic, and some hot sauce. I will make it again, because my husband likes his chili thick and not watery.

Almond Chicken Stir-Fry

This is a good recipe! I'm giving it 5 stars because it is really good for how simple it is. It was better than the bottled sauces I usually use, and a lot more healthy! I actually added some fresh ginger (I love ginger!). I wished that I had doubled the sauce recipe. There wasn't enough sauce for the amount of chicken and broccoli that I had, but I ran out of pineapple juice and soy sauce, so I used chicken broth instead. Not a bad idea but it did take away some of the flavor. My husband really liked this too, and I will definitely make it again!

Chili Potato Burritos

This is a good basic recipe that I have never even heard of before. It is a little carb-heavy, so I would definitely recommend adding other things to the potatoes. I added fresh spinach sauteed with garlic, and a can of black beans. I also, like another reviewer, made the "red enchilada sauce" from this website. It was all really good, but it makes a LOT of food! I took the extra leftovers to work the next day, and people were asking for the recipe! I think it would be especially good to use with leftover mashed potatoes, otherwise it is a little bit time consuming.

Red Enchilada Sauce

This is good stuff! I took some suggestions from some other reviewers - used tomato paste, cut back on the oregano and basil, added a little bit more chili powder and cumin. I also think that whatever salsa that you use probably affects how good this turns out. I used a chipotle salsa - mmmmm! I used this sauce with the "chili potato burritos" recipe found on this site. It all got rave reviews when I took the leftovers to lunch the next day!

Easiest Teriyaki Marinade Ever

This is good! I added some ginger, not because I anticipated that it needed any, but because I LOVE ginger. It is really easy and I will definitely use it again. I used reduced sodium soy sauce, because I was afraid that it would be too salty with regular. I was also nervous about the cinnamon, because it seemed out of place in a teriyaki sauce, but it did give nice flavor. I used this marinade to make Amber's Sesame chicken.

Baked Potato Soup V

This is very good. I didn't follow the recipe exactly, which I regret, so I will do so next time. I added too much flour, so the soup was too thick. It turned out to be like really runny mashed potatoes. But that was my fault, not the recipe. I added broccoli and carrots to this soup, to make it more nutritious. I will definitely make this again. I will caution you, however, about the servings. The recipe as written serves 12 people. That's a lot of soup! I converted mine to a 6 serving recipe and it was still a lot.

Beet Salad with Goat Cheese

I LOVE beets and goat cheese, so this salad was a combo of two of my favorites! It made for a really good salad, except the dressing was just so-so, which is why I only gave it 4 stars. I would recommend more of a balsamic vinagrette. The orange juice didn't turn out quite right for me.

Bourbon Pecan Chicken

WOW! This really is as good as everyone says! I followed many of the reviewers' suggestions, like cutting down on the butter in the sauce (loved the sauce) and using olive oil and butter to fry up the chicken. I also used those chicken breasts that come alredy sliced very thinly. That cut down on the problem of burning the nuts. We really loved this dish!! I served it with roasted asparagus and garlic mashed potatoes.

Greek Salad Dip

I personally thought this dip was just fine, but I just got back from a party where it was a HIT! I got SO many compliments on it! At the end there was some left and someone took a fork and just finished it off! It is so easy to make, very inexpensive, and obviously very popular! Like some other reviewers, I just added the dressing until the consistency looked right. I'm sure that the quality of the Caesar Dressing really impacts the quality of the final product. I just used Kraft, but the dressing does have a starring role, so if you are picky about your Caesar Dressing, then be sure to use your favorite kind. I think this would also be really good with tuna or chicken in it as more of a main dish salad for greens or sandwiches.
