Addictive Sweet Potato Burritos

Ok, whoever named this recipe is SO not kidding - these are addictive! I followed the recipe pretty much exactly except I followed the advice of another reviewer and added the spices to the onions and garlic. Then I added the beans and water, then the mustard and soy sauce (which I thought was really weird but you can't taste the individual flavors of these ingredients). Oh I can't wait to eat these again!

Cucumber Sunomono

Love it! A perfect cucumber salad! I used agave nectar and used much less than 4t, so it wouldn't be too sweet. I also added 2 shredded carrots and probably had more ginger than the recipe called for (I love ginger). I also added some black pepper. It is very refreshing and I can't wait to take it to a summer potluck!

Butternut Squash Risotto

This was just ok. I added a bag of broccoli/cauliflower to it to increase the nutritional value. It was a little bland. I think it would have been better as a side dish but we ate it as our main meal and it didn't have enough texture for that to be the only thing we ate. I probably won't make it again.

Easy Rum-Flavored Black Beans and Rice

I just don't get this recipe. It is basically veggies and black beans. The rum obviously adds flavor, but I really prefer my beans to have some sort of sauce if I am serving over rice. So, to make this edible, I added an extra can of beans, most of a can of tomato sauce, and some chopped ham. I also added shredded cheddar on top. With the additions I made, it would be about a 2 1/2 or 3 star, but I have definitely had much better beans and rice recipes.

Mexican Mole Sauce

Threw this in the slow cooker with a pork tenderloin. Added some chicken broth to make enough sauce. The pork was shreddable by the time it was cooked. This was SO GOOD! As in, lick the plate good! I also threw in a can of black beans. Served it over mashed potatoes, although I thought about serving it over baked potatoes. The sauce isn't too Mexican, it just made a very richly flavored sauce for the pork.

Zesty Slow Cooker Chicken Barbecue

Quick and easy - yum! I served it on buns. And froze some, which I later mixed with a can of black beans and served over rice. Definitely use good bbq sauce though - poor quality sauce would kill this recipe.

Spiced Butternut Squash Soup

Delicious!! I have to admit (I know some people hate it when people change the recipe, but whatever) that I changed the recipe some. I had a leftover butternut squash/leek/tofu gratin that I needed to use up. But basically I stuck to the original recipe EXCEPT for using sweet potatoes instead of regular potatoes. It was quite possibly one of the best soups I've ever eaten. The spices are spot on.

Roasted Garlic Lemon Broccoli

If you have never tried roasted broccoli before, you MUST try it!! It gives broccoli such a wonderful flavor. MMMMMM!! I usually omit the lemon juice in this recipe just because I rarely have it in the house. It is just fine without it.

Chicken Pot Pie IX

I really liked this pie and found it easy to make. I think I made extra sauce, I didn't really measure how much broth I used. I did boil the chicken and veggies (I used broccoli instead of peas) in the broth and reserved that same broth to use in the sauce. I also added some garlic and also some dried thyme. I think that the sauce would be good made with a little white wine as well. My pie wasn't dry at all the night I made it - it was perfect! When I ate leftovers for the next two days, they were a little dry, but it was fine.

Meatloaf with Fried Onions and Ranch Seasoning

This is some awesome meatloaf! I made the recipe excatly except that I split the meat into 5 "mini-loaves" and cooked them on a baking sheet. This lets the bottom get a little crunchy. MMMM! I thought the flavors really blended together and I couldn't really taste them separately. But it sure was good! Hubby loved it too!

Penne with Red Pepper Sauce and Broccoli

This was very ho hum. I didn't like the texture of the sauce. I think that these types of sauces are better prepared with roasted red peppers. Instead I had a lot of little chunks and it didn't really form a sauce. I don't know, I just didn't think it was good enough to expend the effort.

Eggplant and Zucchini Casserole

This was pretty good. I definitely would say that you need to use the herbed stuffing instead of the plain because almost all of the flavor came from the stuffing. I love stuffing, so it was fine. I thought it reheated fine the next day. I didn't precook the stuffing but let it cook in the casserole with the juices and it was good.

Light and Fluffy Spinach Quiche

Great recipe! I forgot to buy spinach at the store so I used broccoli instead. It was still fabulous. I followed advice and used an extra egg and also used feta cheese. I served it at book club and it was a hit!

Cheesy Spinach Casserole

Yum! Easy and delicious! The changes I made were to use plain yogurt instead of sour cream, I sauteed a chopped onion instead of using the dried, I used the entire can of artichoke hearts, and I used shells intstead of spaghetti. I think any shaped pasta would be better than spaghetti. We will be eating this again!

Delicious Black Bean Burritos

I'm giving this only 4 stars because as written, the recipe would probably only ear 3 stars but with the changes that the other reviewers made, I would give it 5 stars. It definitely benefitted from the close to a cup of salsa that I added as well as the shredded cheddar. Yum and I will certainly make it again!

Asian Ground Beef and Pepper Saute

This recipe as written I give 3 stars. It was a little bland - for some reason all of the flavors did not get incorporated very well into the dish. But it can easily be improved. Next time I'll probably double the "sauce" ingredients (along with the garlic and ginger) so that I can cook it longer without drying out. When the sauce cooks down it should become more flavorful. I will say that it was very easy - perfect for a mom!

Fettuccini with Salsa Cruda and Feta

BLAND! This was even less tasty than the nights that I just throw together a pasta/veggie dish. Of course, it probably would have been better with better (in season or grape) tomatoes, but still. I liked it better the next day for lunch after I microwaved it (so the feta got all melty) and also added balsamic vinegar. Will be deleting this from my recipe box, sorry.
