Tasty Lentil Tacos

I'm a meat eater all the way, but these were FANTASTIC!! I don't ever think about tacos for breakfast (ew!) but let me tell you, I'm craving these right now! We made it as written but omitting the salsa (didn't need it mixed in, we added it afterwards on top of the tacos), and added avocado. LOVE these!!

Suki's Spinach and Feta Pasta

With just a little change this recipe was awesome! We added 2 (raw) hot sausages sliced up to the pan first, then as they were almost done cooking added the onion and garlic. (We didn't need any red pepper flakes because of the sausage.) Then add the mushrooms so they can cook a bit before the tomatoes. Also, make sure that you add the spinach LAST, not at the same time as the tomatoes because it wilts super fast! Served with bow tie pasta and it was delicious!!

Angela's Awesome Enchiladas

These are really fantastic! I made mine with 1.25 lbs ground beef instead of chicken which made it really easy... at step 2 instead of using the butter to cook the onion I just added my raw beef and cooked it with the onion and two cloves of garlic (minced) until mostly browned, then seasoned with the taco seasoning, added the chilies, finished the browning of the beef, added the green onion, and water. (Skip the extra onion powder and garlic powder, but be sure to add the lime juice!) Proceed with the recipe as written... Great recipe!!

Cheesy Chicken Bundles

Very bland. Followed recipe exactly. Tastes like you're eating a large chunk of cream cheese, with some sort of meat product wrapped around it. If you like plain chicken breasts and cream cheese, you'll like this recipe...

Apple Butter Spice Cake

Fantastic "coffee style" cake! I added a chopped apple that I tossed with cinnamon and a little nutmeg and put it in the middle layer of the cake...it was fantastic! (Turned out great even with fat free sour cream!)

Chicken Souvlaki Gyro Style

This is a fantastic recipe! We don't have any ethnic restaurants around where we live and this makes us feel like we're back in one of our favorite Greek places. The cucumber sauce is fantastic!!

Brooklyn Girl's Penne Arrabiata

FANTASTIC!! We cut the chicken in strips before frying and used fettucini instead of penne. The recipe is great and yes, you really need to add those garlic cloves.

Chili Rellenos Casserole

4 or 5 stars... Great recipe with a few changes. I used whole pablano peppers, then cut off the ends (removed the seeds) and stuffed them with browned lean ground beef that had been marinating with a can of enchillada sauce. Stuff some cheese in the peppers for extra flavor. I also found that we didn't need to add a second bag of cheese when it was all finished cooking..just use 1 Mexican/fiesta cheese package when the recipe calls for it (before putting the casserole in the oven). These changes really make this a fantastic entree. We serve it with yellow Goya rice.

Crawfish Fettuccine I

Awesome recipe...made a few changes.. instead of green pepper, use a red pepper (sweeter) & instead of crawfish use canned (real) lump crabmeat. It makes this fantastic "fancy macaroni and cheese". Adjust the level of spice to your liking.

Asian Lettuce Wraps

This is a fantastic asian lettuce wrap recipe! *Very similar to P.F. Chang's lettuce wraps!! We make ours with ground turkey and add a little extra hoisin sauce and sesame oil. It's a great staple at our house.

Chicken Satay

This is a FABULOUS recipe for peanut dipping sauce. I made it with regular peanut butter and sugar (since we're not dieting) and it was amazing. Friends and family loved it. Be careful not to over-do the lemon juice if you do add extra, since it can mess up your ratio and flavor a bit. *I used fresh minced garlic, and it was great.
