Crispy Potato Pancakes

Mmmmm. These were delicious. I left out the nutmeg but I added a little garlic. I also squeezed out the excess liquid from the potatoes. With the help of my food processor, this recipe was quick, easy and definitely a keeper.

Rosemary Ranch Chicken Kabobs

I found the kabobs just okay. They were tender but lacking in flavor. I followed the recipe as directed except for reducing the olive oil to 1/4 cup. If I make this recipe again, I would add more rosemary.

Blueberry Breakfast Sauce

You will not be disappointed with this sauce. It is perfect as written. I like to add a squeeze of lemon juice for an additional flavour boost.

Glazed Lemon Bundt Cake

The cake was okay. If you like a plain pound cake, then you will like it. It has very little lemon flavor on its own. All the flavor comes from the glaze. I wouldn't make it again.

Pumpkin Pie Squares

This recipe is a keeper. Instead of canned pumpkin I used pureed pumpkin. Since it is a little more liquidy, I didn't use all of the evaporated milk - maybe about half the can. I used a 9X9 pan and baked it for 45-50 minutes, until set. Yummy!!!

I wouldn't make this again. The lemon was quite subtle. It needs LOTS more lemon juice and/or lemon zest.

I didn't add extra sugar or lemon to the dates and it was just fine. I really pressed the top layer down firmly and it held together well and was easy to cut into squares.
