About this Cook
Love cooking old favourites and trying something new. My husband and I both enjoy cooking and like to keep things varied and fresh.
My favorite things to cook
Roasted Chicken with lemon and garlic and compound butter under the skin. Makes the chicken very moist and flavourful. Soup...any kind of soup. My kids love most of the soups I make. Chicken, Corn Chowder, Curried Squash with Apple are just a few that I make regularly.
My favorite family cooking traditions
My mum used to make stew every Sunday for lunch, but when we came to Canada she only made it at Christmas. Both my brother and I now make the same stew for Christmas brunch. Odd...I know.
My cooking triumphs
My husband's mother used to make him Butterscotch Meringue Pie every year for his birthday. After she passed away we never had it any more. One year I made the attempt and it turn out ok, but he cried when he saw that I had made the effort for him.
My cooking tragedies
I've had too many to mention...but at least I like to experiment.

Turkey Garbanzo Bean and Kale Soup with Pasta
I have made this many times and enjoy it more and more. I don't put the pasta in because I really don't like pasta in soup. I have it on the stove right now and the house smells wonderful. This time I am using a whole turkey breast as well and the ground turkey. I have used purple and green kale in this batch. Almost makes going to work tomorrow something to look forward to because this will be in my lunch box! :)

Roasted Cauliflower and Leek Soup
This was very delicious and easy. I used Carnation skim milk instead of cream and a little parmesan cheese just before serving. Made it last night for my family and it was very well received. :)

Mini Beef Wellingtons with Red Wine Sauce
This was very good; however, I felt that there was too much puff pastry. Next time I make Beef Wellington I will make a whole one and slice it. That way there will be only a small amount of the pastry for each person. The mushroom/patte was very delicious and the pan sauce was excellent.
