Spinach-Stuffed Flounder with Mushrooms and Feta

Excellent recipe! Fabulous without any changes except a little extra feta. We have used flounder, halibut, cod, and sole. Any white fish work. If the fish is too hard to roll, just put the stuffing between two fillets and bake flat. Ours have never been mushy as some reviewers say, but the firmer fish is probably best. Season the fish and/or stuffing any way you like - breading is nice, but not necessary - add wine or use butter instead of cooking spray- it doesn't really matter - always delicious!!

Mushroom and Chicken with Sour Cream Soup

Very good! I used left-over roast chicken instead of rotisserie, but otherwise followed exactly. Love tarragon, but think it could use a little less, and a few more mushrooms. Needs a deep skillet!

Omelet in a Mug

Great recipe! Make a healthier version of egg mcmuffin. Instead of cooking spray, use a tsp of water in bottom of mug or bowl, crack egg in and break yolk and whites with a fork. Cover with paper towel & microwave 55 - 60 seconds (it will pop) Pat egg dry on paper towel. Slice the bread in half and put 2% american cheese on on one side & canadian bacon on the other side, put in toaster oven until cheese is slightly melted. Combine to make sandwich. If you like, add mustard to the bread & salt & pepper to the egg.

Baked Haddock

This was one of the best baked fish recipies I have ever had. My husband loved it. I was worried about baking at 500 degrees, but it came out moist and flaky. I followed the recipie, except I didn't have any milk, so I used a garlic vinairgrette salad dressing instead. I think it may have added a good flavor. Also, I added black pepper to the bread crumbs. Will add this to our favorites.
