I HAVE BEEN COOKING SINCE I CAN REMEMBER. I STARTED COOKING WHEN I WAS A TEENAGER, LOOKING UP RECIPES OUT OF THE BETTY CROCKER COOK BOOK TO MAKE BEFORE MY MOTHER GOT HOME FROM WORK. I LOVED SEEING HER FACE WHEN SHE WOULD WALK IN THE DOOR TO SEE THAT DINNER WAS ALMOST DONE. I AM THE MOTHER OF A 7 YEAR OLD AND 4 YEAR OLD AND TWO STEP CHILDREN, AND ONE ON THE WAY, WHO LOVE FOOD, BUT ALL HAVE DIFFERENT LIKES AND DISLIKES. I HAVE ALWAYS COOKED DINNER FOR FRIENDS AND LOVE HAVING PEOPLE OVER FOR DINNER AS MUCH AS POSSIBLE.
My favorite things to cook
I LOVE TO COOK FISH TACOS, PORK TENDERLOIN, CHICKEN, ROAST, SHRIMP GUMBO, AND BAKED POTATO SOUP- AND ANY TYPE OF VEGETABLE. I LOVE ASIAN FOOD. ANY KIND OF VIETNAMESE FOOD I LOVE. I TRY NEW RECIPES AND MAKE A LOT OF SOUPS. I HAVE RECENTLY INCORPORATED TOFU INTO OUR DIETS AND I FOR ONE LOVE IT.
My favorite family cooking traditions
MY MOTHER PASSED ON TO ME THE LOVE FOR FISH TACOS (BEING FROM SAN DIEGO) AND SUSHI, WHICH I HOPE TO MAKE SOON! ALSO, I LOVE CORN FRITTERS...ONE OF MY MOTHERS' FAVORITES ALSO.
My cooking triumphs
OMIGOSH! I LOVE COOKING SO MUCH, AND THINK IT'S WEIRD THAT THE FIRST TIME I COOK THINGS, THEY USUALLY COME OUT GREAT! MAYBE THAT'S WHY I LOVE TRYING NEW FOOD.
My cooking tragedies
I TEND TO BURN COOKIES, AND ONCE MADE A STIR FRY THAT REQUIRED CORN STARCH, EWWW, IT TURNED OUT TO LOOK LIKE A PASTE!

Tortillas II
I made this exactly to the recipe. I doubled it. The dough was a bit dry. I added a bit more water to moisten it and let them sit on and under moist towels. I kneaded them slightly. I also use hot water. I have a recipe for thick chewy tortillas that is more of a Texas/Native American recipe that I love. These aren't as chewy as I had hoped for. Still great though! I like to add cilantro and jalapenos to my tortilla mix too, makes them very good.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)
I just made this. My house smells amazing. I put lard in the cast iron, browned the chickpeas for a while and added spices including curry. I did not use cumin as it is a hispanic herb and I wanted to make this more Indian. I used fresh spinach and just wilted it. I added salt, garlic powder, pepper, and it is so so so good. My one year old is chowing down on them.

Tater Tot Casserole I
This is amazing! I added salt, pepper, and garlic of course! I also added an extra egg. I topped it off with green onions and salsa! We will be making this for holidays to come.
