I think its a keeper! I did not find it dry at all. Instead of draining and rinsing the beans, I measured the bean liquid and used it as part of the 1 c water. All you would need to do if you like it spicier is use hot salsa, instead of medium.

I don't understand how I would brown the meat in the sauce, so will sear the meat first, remove it from the pan, and then cook the sauce and proceed. I can't wait to try it.

Cranberry Salad IV

My Women's Club made this to serve at a luncheon given for a Holiday House Tour. We made the following changes in the recipe to save a little work and expense, and found that the result did not suffer at all. We used 1 10 oz. bag mini marshmellows per recipe and 4 c. coolwhip instead of whipped cream. The recipe doubles, or triples well. We used a 1/2 c. scoop to serve and the salad kept its shape nicely.
