Southwestern Egg Rolls
Tastes just like the restaurant appetizer! I omitted the spinach, but kept to the recipe aside from that. I sprayed with Pam, baked for 15min @ 450 and they were perfect! Used Amy's Cilantro Cream Sauce from this site as a side- dh & the fam loved it, I prefer just sour cream.

Best Ever Banana Bread
WOW! I decided to throw this together since I had 3 bananas that were WAY over-ripe and some extra buttermilk I needed to use. Followed the recipe almost to the letter: only used 1c of white sugar & added 1t vanilla as many, many reviews indicated. Also added 3/4c semi-sweet choc chips and topped with chopped walnuts. I made one 9x5 loaf and used the rest of the batter to make muffins. Muffins cooked for about 25min at 325, just pulled them out and they are FAN-freaking-TASTIC! Can't wait for the bread to finish!!

Rempel Family Meatloaf
Very tasty meatloaf. I've bene making meatloaf for yesrs & years, but this made for a nice change. I loved the idea of adding the Ritz crackers, and will most likely add more the next time I make this. And if the family has their way, I'll be making my meatloaf based on this recipe from now on lol. I don't much care for steak sauce, but dh loved the extra "oomph" of flavor.
