Greek Pasta Salad

This past salad was awesome. It really held it's flavor overnight. I added a little chopped pepperoni and I substituted clamata olives for the black olives. I also cut down on the olive oil and replaced some of it with the oil from a jar of sundried tomatoes.

Best Spinach Dip Ever

This was very good! I actually added 16oz of well drained (pressed water out with a paper towel) spinach. It came in a 16oz bag and I didn't want to waste 6oz of it.

Best Marinara Sauce Yet

This is awesome! I used two cans of petite diced tomatoes instead of stewed and I left them chunky. I like my marinara sauce with small chunks of tomatoes. I also added a little more garlic and some basil. It is easy to season this the way you like. I used this one time on parmesan chicken and another time on homemade meatballs. I like this so much more than the jar sauces. I think I will try making up a big batch of this and see how well it freezes.

Fajita Marinade I

I have made this a couple of times and I think it is great. I won't be buying the fajita mixes anymore. Yesterday when I made this, I added 1/2 t cumin and 1/4 t tumeric.

This was quite good. It was a little rich but good. Changes I made: I used Italian seasoned Panko crumbs (to which I added about 1/2 T additional Italian seasoning) which made it crunchier. I melted the butter and then added the garlic and lemon juice to it rather than sprinkle the lemon juice on the crumbs. I thought it would mix in better this way. I also had no Romano cheese on hand so I used parm.

This was good. I marinated the roast in the fridge for about 30 hours. I also cooked it in the crockpot for about 8 hours. It came out tender. I did not make the sour cream gravy. I think next time I will make it too and try it with the roast.

Tater Tot Casserole I

My husband and son really liked this. I made it as written but added some onion which I sauted and some minced garlic. We love onion and garlic. It also took about 60 minutes to bake. I used an inserted knife to check if it was done.

Cheddar Spirals

This was good. I made it as written with the addition of about 1 t onion powder. I gave it 4 stars because it was almost too creamy. To make it less creamy, I put it in an 9 by 13 pan and baked it at 350 for 30 minutes before serving. Before baking I sprinkled the top with bread crumbs and a bit of parm. cheese. This was just what it needed.
