Peanut Butter Banana Oatmeal Raisin

these are my favorite healthy cookies and i make them all the time! i make some alterations: i cut back on the white sugar (only 1/4 cup) but keep the 1/2 cup brown sugar, and i use 1 cup of whole wheat flour and 2 cups of oats. this makes the cookies softer and more moist. if cookies don't flatten on their own, you can flatten with a fork before baking. they make a GREAT snack!!!

Pumpkin Turkey Chili

this was REALLY good! i added a can of black beans, chili beans and canned corn and whatever spices i had. the pumpkin gives the chili a thick consistancy and packs on the nutrition. this does not taste like pumpkin, though, and it's not supposed to. (pumpkin is a relatively bland squash on its own). will definitely make again!

No Bake Peanut Butter Pie

everyone LOVES this pie! it looks unassuming, but once they put it in their mouths, they are floored! i added extra peanut butter and made with an oreo crust. super easy too!

this was good, but a tad too tangy. perhaps next time i will cut down the cream cheese. i might try a buttery cracker topping instead of bread crumbs too. but a great potluck dish!

Potato Salmon Patties

i have been looking for a way to use up the canned salmon in my pantry, and this was the perfect solution! very flavorful and moist! i coated each patty in extra bread crumbs, used whatever spices i had and baked them at 350 degrees for 15-20 minutes. an easy meal that looks fancy!

Sweet Potato Pecan Pie

very easy and SO good! the pecan topping made it extra fancy and added a different texture to the smooth filling. i used yams instead of sweet potatoes as they're less starchy and lumpy when mashed. made this with a basic flaky pie crust (also from allrecipes), and everyone loved it!
