Peanut Butter Temptations II

Reviewed: Oct. 6, 2008
AMAZING! I made these for a family party and I was really glad I decided to double the recipe. Everyone loved them and even asked to take some home with them. I ended up with only 4 cookies to take home for myself! I will definitely be making these often! Super easy! I did freeze the pb cubs (unwrapped) while I made the dough and it made it much easier to handle them. :)

Awesome and Easy Creamy Corn Casserole

Reviewed: Sep. 19, 2008
Excellent and easy! My husband has requested that I make this once a week now. Followed the recipe exactly ... IMO it doesn't need any changes.

The Best Banana Bread

Reviewed: Apr. 4, 2008
Hands down THE BEST banana bread I have ever made OR tasted! I made a few alterations based on other reviews. I used 1/2 white sugar, 1/2 dark brown sugar. Real unsalted butter instead of margarine. Added a tsp of vanilla extract and a tsp of cinnamon. In a skillet I melted some butter and toasted some pecans with a little brown sugar. I let those cool and then added them to the top of the loaf before cooking. AMAZING!!! The banana taste is the main focus in this recipe and the bread comes out VERY moist!! I am purposely going to neglect my bananas now just so I have an excuse to make this bread every week!

Chicken Noodle Casserole

Reviewed: Jan. 9, 2008
Definite comfort food. I have made this a few times now and always change up the veggies that I put in. My soon to be husband (2 wks!) asks for me to make this all the time. Definitely a keeper!

Shepherd's Pie VI

Reviewed: Nov. 8, 2007
Great recipe. Definite comfort food. Took some suggestions of other reviewers. I also used 1/4 c worschestire sauce in the meat. Sauteed meat with 1/4 c onions and 2 pressed garlic cloves. Mixed in separate bowl one packet brown gravy mix and 1 c water. Added gravy mix and 2 tbl ketchup to meat/onion/garlic. Boiled potatoes and carrots in same pot to save time. Didnt mash carrots. Mashed potatoes with 1/4c sour cream and about 3 tbl milk. Layered in pie dish meat mixture on bottom, sliced carrots, mashed potatoes, and then topped with cheese. Great flavor and made the house smell great. Fiance loved it and insists I make it often. :-)

Broiled Tilapia Parmesan

Reviewed: Oct. 22, 2007
Fiance loved this. I'm not a fan of fish so I just thought it was ok. The sauce was wonderful though and I am going to try it on some chicken.

It's Chili by George!!

Reviewed: Oct. 19, 2007
This is our new chili recipe. Made this for a day of watching the BEARS and the fiance was impressed (he is usually the chili-maker in the home). Now the responsibility is mine! :) At the suggestion of other reviews I replaced the tomato juice with a can of tomatoes but I used the diced tomatoes with chilis. IMO it could still use just a little more KICK so we added a few dashes of hot sauce to heat it up a little. Went perfect with a side of corn bread!

Chipotle Crusted Pork Tenderloin

Reviewed: Apr. 26, 2007
CAUTION ... HOT HOT HOT RECIPE. Made this for dinner last night. Followed other reviewers suggestions and cut the chipotle in half; it was still WAY too hot for us and my boyfriend LOVES spicy foods. We even made it with a side of sweet potatoe fries and cream corn to kill the fire and while they paired very well with the pork it still wasn't enough to cool this down. I will most likely make again using even less chipotle (probably cut it down to 1/2 tbl ... 3/4 tbl tops!) and increase all other ingredients to give it a better balance.

Meatball Sandwich

Reviewed: Jan. 2, 2007
We really enjoyed these sandwiches. Changes I made to the recipe: used a softer bread, added minced onion and a little salt to the meat, and used ground turkey instead of ground beef. Like other reviewers I made about 20 smaller meatballs and had to cook them for around half an hour. Great sandwiches and WONDERFUL left over. Will definitely be making again!

Stuffed Chicken Breasts

Reviewed: Nov. 16, 2006
This turned out amazing and the presentation is spectacular. I also chose to bread the chicken with italian seasoning bread crumbs. Works well if you lay the butterflied chicken breast in the breading while you stuff the center. Once you close with toothpicks the outside is already breaded. Definitely a meal you could serve to company and it will look like you spent hours in the kitchen (but you won't!). This is something we will be making often! I served it with mashed sweet potatoes and incorporated the toasted pecans that are also in the stuffing. Excellent meal!

Garlic Cheddar Chicken

Reviewed: Nov. 8, 2006
I thought this was just ok. I too used half butter/half olive oil. I also cut slits in the chicken to insert slivers of garlic. Thought the flavor was slightly bland. Needed more of a kick. Might make again if I need a quick dish but definitely not my favorite.

Italian Breaded Pork Chops

Reviewed: Nov. 3, 2006
Excellent pork chops. We actually added a little to this also. We stuffed the pork chops with a mixture of horseradish and cheese. It was great! Served with red potatoes tossed with spices and parmesan cheese (cooked in the oven) and a side salad. Wonderful meal!
