Grandma B's Bean Soup

Reviewed: Oct. 12, 2006
This was some SERIOUSLY tasty ham & beans!! I made it twice and the first time was a bit bland so the second time I took some other reviewers suggestions and used chicken broth instead of water (I used 2 cans) and put in 2 bay leaves. It was HEAVENLY. I couldn't get enough. I used a small turkey ham to cut back on cals/fat and it was delish. YUMMO!

Penne with Shrimp

Reviewed: Nov. 2, 2006
This was simple but it was a little plain to me. I added lots of extra garlic and some basil. I omited the wine because it already seemed a little too soupy. After tossing it with the pasta I decided it needed more substance so I put in 1 cup of tomato sauce. I didn't put the whole cup of cheese on it because I am trying to watch my wasteline - I let everyone sprinkle their own desired amount of cheese on. I used a bag of frozen shrimp because I had them on hand - just thawed and pulled the tails off and threw them in the last few minutes to heat up. My husband LOVED LOVED LOVED IT!!!! So even though I thought it was just so-so I am sure I will be begged to make it again! :)

Honey Glazed Pea Pods and Carrots

Reviewed: Nov. 21, 2006
THis was a great glaze - especially on the carrots. I wasn't crazy about it on the pea pods - but maybe that's just because I prefer carrots. I will keep this recipe and just use carrots next time! :)

Mexican Casserole

Reviewed: Oct. 19, 2006
This recipe is DELISH!!!! It doesn't need any alterations. I don't like cooking my chicken in oil though - so I did cook mine a little differently. I put it in the crockpot in the morning with a can of chicken broth and let it slow cook all day. Then when I got home from work I pulled it out and it shredded beautifully. The shredded chicken really went well in the recipe!!!! And it made prep time nil for a working mom. I also used a whole pack of taco seasoning and it wasn't too spicey! Yummmmmmmmo!

Baked Salmon Fillets Dijon

Reviewed: Oct. 31, 2006
Simple, quick & deliscious. I skipped the butter and just spritzed mine with "butter spray" to save big time on calories. The mustard was a great compliment to the fish.

Super Sausage Gravy

Reviewed: Jun. 24, 2007
I made this with Turkey Sausage. I was afraid there wasn't going to be enough fat to make the gravy but it turned out PERFECT. Make sure you get the flour stirred in and around the beef really good before you add your milk so you "cook" it a little. I used low carb milk. It was runny but after cooking about 8 minutes it thickened up BEAUTIFULLY. It was a lot of sausage for the amount of gravy - but that's how we like it. This was so easy. It deserves 6 stars for being so easy and extra yummy!!!

Baked Orange Roughy Italian-Style

Reviewed: Oct. 27, 2006
YUM YUM YUM. This coating was DEEEEEEELISH!!! I didn't have romano so I just used all parmesian and it was so yummy. I didn't use the melted butter to save on cals/fat and I just sprayed my fish down with "butter spray" before dedging. I did have to cook a bit longer then suggested but I used two HUGE filets (over 1/2 lb each) - the smaller peices would have probably cooked in the recommended time!

Simple Pasta Salad

Reviewed: Oct. 12, 2006
I have gotten some RAVE reviews making this salad. Only gave it four stars because I did make some modifications. I used the cherry tomatoes and just cut them in half. I used one cucumber and added one green pepper. I didn't have the italian seasoning so I bought a packet of Italian dressing mix (zesty) and added that in along with the bottle of prepared dressing. I also added some jumbo olives that I sliced. Everyone just LOVED it and I think a big part of it was the "kick" that the zesty dressing packet added. I am now asked to bring it to every family event. My 2 year old can't eat enough of it when I make it!!

The Ultimate Chili

This is such a yummy slow cooker chili. Everyone who has tried it loved it. I used venison in mine and actually used almost 2 lbs - my hubby likes his chili really meaty. It was absolutely delish. Just made up some corn muffins to go with it. It smelled so good cooking all day!

Creamy Rice Pudding

Reviewed: Jun. 19, 2007
YUM YUM YUM!!! I LOVE rice pudding but finding a sugar free variety in the store is a challenge and expensive. This was SO easy. I used Splenda instead or sugar. In an effort to keep it super figure friendly I also substituted eggbeater for the eggs and used 2% low carb milk. I left out the raisins and let hubby and kids add them if they wanted. It was just such a yummy basic plain rice pudding. I liked it warm with a generous sprinkle of cinnamon. Hubby had a cold serving with raisins. Both of us couldn't get enough. And for a HUGE 1 cup serving mine only cost about 170 calories. What a deal!! I'll be making this a LOT!!!

Tasty Sweet Potatoes

Reviewed: Jan. 29, 2007
The flavors were great in this. And I was looking for a good sweet preperation for sweet potatoes without adding all of the marshmallow and brown sugar that make it more like dessert!! But like other reviewers said - the timing was wrong. I ended putting them in the mocrowave for about 5 min to try and get them done after the timing in the oven left them only half cooked. Once they were finished they were delish!

Kathy's Roast and Vegetables

Reviewed: Nov. 9, 2006
AMAZING!!! This is the first time I ever made a roast and it turned out PERFECT!!! We had friends over and everyone LOVED it. I couldn't believe it - the most deliscious gravy just magically appeared when it was done!! I did use extra potatoes (yukon gold) and carrots and I threw in a couple of onions too. Other then that I followed the recipe to a T and I will definetely make it again and again!

Pork Chop and Potato Casserole

Reviewed: Oct. 16, 2006
This was a decent recipe - a good starter. I added a few spices and some garlic and I still thought it needed a little something. I didn;t care for the potatoes - but that may have just been the potatoes I had - they tasted a little earthy or something - maybe it was the soup - next time I might try it with cream of chicken instead and see if I like it better. Definetely a good homestyle meal. I will make it again but try and tweek a little.
